From Saku-no-Hana, one of my favorites, this sake is made with high-productivity malic acid yeast (Nagano yeast P43-14). On the first day, it was sweet, sour, and fruity, with a slightly low alcohol content that made it easy to drink and enjoy. On the second day, the sourness decreased and the sweetness became deeper.

First sake. Kurosho Senjozo, extra edition Kurosho Senjozo test brew sake. My wife bought this sake when she visited Nagano Prefecture. When I chilled it well and started drinking it, the sweetness pushed it out. Without prior knowledge, I thought it was like a Junmai Daiginjo, but it was a Junmai Daiginjo. As it warmed up to room temperature, it added a nice bitterness and sourness that made it indescribably delicious. Thanks to my wife's selection.

Continuing with the sake I bought in Fukushima Prefecture, here is another sake from Niigata Prefecture. I bought this at a supermarket for 1,738 yen. It was fruity, with a slight gassy taste that I liked. I got the impression that it was about 1st or 2nd in Japan.

I went to Fukushima Prefecture because my eldest daughter, who married in Fukushima Prefecture, had a baby (our first grandchild). I found it in the cold sake corner of a supermarket not far from my daughter's apartment and bought it. It had a nice pear-like aroma and a similar sweetness. I don't think it's exclusive to dealers, but I envy the fact that you can usually buy 寫楽 at supermarkets.

Sacred Sake Mother Active Sake. The "beware of opening the bottle" label is conspicuous, but it didn't blow out as it was chilled thoroughly without stimulation. The refreshing acidity combined with a firm sweetness was like blueberry jam. It was a very tasty sake.

It appears that DHC has purchased the brewery and is operating it as DHC Sake Brewery Co. Echino Umesato Junmai Ginjo. The purchase was made at Uonosato in Niigata Prefecture, recommended by a man at the store. I was told that the paper bag is to protect the sake from ultraviolet rays. When I took it out of the bag and looked at the label, I saw that the sake degree was +4 and 🙂‍↕️ My expectations were half lowered, but when I took a sip with trepidation, my wife and I agreed, "This is delicious. As a result, it was a delicious sake.

Makiki Ryo Special Junmai from Takachiyo Shuzo ¥1,815-. It was a delicious sake with a refreshing sweetness, moderate acidity, and a very slight gaseous taste that made it easy to sip. We finished it with my wife's sister and her husband in no time. It went well with tuna medium fatty tuna and sea bream sashimi.

First sake. Purchased at Sake-no-Seibu Sake Shop. ¥1,870-. Sweet and sour aroma reminiscent of pineapple. In the mouth, it has an elegant sweetness without much acidity, a slight bitterness, and a very slight gasiness. It was a rare and hard to find sake, but the taste was universal in the same price range. Anyway, I liked the taste.
