3. 2023, Yamazan from Nagano, Japan, which was revived in 2023. It is lightly cloudy and quite sparkling. The mouthfeel is well-balanced between sweetness and bitterness typical of muddy sake, with a touch of carbonation. The aftertaste is quite spicy. A little more umami would be nice. Junmai Ginjo, Yamae-Nishiki, 55%, hi-iru, sparkling, about 2,000 yen, Otsuka Sake Shop in Honmachi.
