Tonight we have another bottle, Hyakuten Manten.
First, let me explain about this sake.
This sake was brewed by the Yamano Sake Brewery using rice produced by the Katano Orihime University Sake Brewing Group, of which I am a member.
The sake I uploaded once at the new sake unveiling in March was a draft, and this time it is a fire-brewed version.
It is served at room temperature.
When poured into a sake cup, it has a sweet and gorgeous aroma. The aroma is especially gorgeous this year.
The mouthfeel is mild and slightly effervescent.
The aroma is reminiscent of a gorgeous pineapple, and the mild, full-bodied sweetness is delicious. The fire-aged version has a lighter taste compared to the nama-zake.
Personally, I think I prefer the fire-aged version💕.
The other day at Orihime University, there was a sake tasting WS where we compared several different types of sake,
Of course the other sakes were delicious, but everyone agreed that Hyakuten Manten was the best 🤣.
That's how much everyone who attended had a special place in their hearts for this sake 🌾✨.
The time spent enjoying the sake that we all worked together on was irreplaceable 😊.

Katano Sakura Daiginjo Fukuro-hozuri Shizuku Nakakumi-Unfiltered Genshu
This brewery is located in Katano City, Osaka Prefecture.
The rice is polished to 50% Yamadanishiki produced in Osaka.
This Daiginjo is limited to 600 bottles.
Gentle and gorgeous aroma, soft rice flavor,
balanced with a clean acidity and a hint of bitterness.
A crisp aftertaste with a balance of clean acidity and a hint of bitterness.

A gift from Hirupeko. As she posted, she participated in the sake rice production ✨I was wondering what it tasted like. I was curious to know what it tasted like, and I never expected to receive it 😊.
We would like to express our gratitude to Hirupeko and our respect for her time, effort, and love for sake brewing.
First, let it cool.
At first, it smells like a blend of rice malt and koshinko (rice powder). In the mouth, there is plenty of rice flavor supported by a thick, soft, and somewhat sharp acidity. The finish is big and relaxed with the acidity and a bit of bitterness that is there from the beginning.
Delicious 🍶.
Next, warmed sake.
At about 35 degrees, a slight sweet aroma emerges. Taste once here. The acidity is quite forward. I thought it would be more balanced if it were warmed up a little more, so I warmed it up to over 40 degrees Celsius, and the sweet aroma of the rice gently expanded. Here it is! I pull it out of the hot water bath and enjoy it. The gentle and elegant cotton candy-like sweetness of the rice is gently and softly supported by the acidity that is a characteristic of this sake. It's a relaxing taste that will take the tension off your shoulders. This is the best 🍶.
Personally, I think it tastes much better warmed up ✨.

The crystal color has a slight yellow tinge.
The aroma on the nose is sweet and refreshing, with a hint of pear.
The soft and fine effervescence on the palate gives way to a mild and full-bodied sweetness that contains the umami of rice and a fruity pear-like flavor. It has a refreshing aftertaste with just the right amount of bitterness.
It is a gorgeous, mildly sweet sake that reminds one of spring.
