694 2002/7 Daruma Masamune Heisei 5-nen brewed Junmai-shu 16-17° A Gifu Gifu City Shiraki Kensuke Shoten 300 861 An aged sake we've had before. This is the one we compared to AFS 1975 while we had the impression of AFS 1975. This is also delicious and a completely different sake from AFS. Each sake has its own character, and each has its own new sake and its own aged sake. The comparison of aged sake itself is meaningless... I was taught such an obvious lesson.

Matured Old Sake It was getting a pretty good aged look. It had been sitting in a storage room, so it might have ended up being damaged by the heat. ....... I decided to open it. I put it in there for 8 years to be with my daughter when she came of age, but I thought it might not be able to withstand the temperature changes for another 12 years. It's not easy to keep space in the fridge. However, I was impressed by the yeast and the strength of the production. I wondered if it could be aged without opening the bottle. I think it could have been matured without opening the bottle, but the mildness of the aging process and a little bit of a tangy taste makes me think it was time to open the bottle. Well, it's always a gamble when it's time to start aging, isn't it?

The photo is from a drinking comparison, but the first sake on the right is Daruma Masamune. (Masamune is a common name for sake, apparently. Aged sake is sweet and mellow, but has a strong taste. If you like Shaoxing sake, red sake, or Maimito, you may like it. I'm not a fan, I guess. It's delicious, but I just wasn't looking for this sweetness and peculiarity right now!

Awamokuzakura Pitch Pitch Nama Sake, Junmai-shu brewing, 720ML Purchased at Terashima Sake Shop. Fresh but quite full-bodied. It was made using 100% Hatsushimo, an edible rice produced in Gifu Prefecture.

The after-party was at a standing bar in front of Niigata Station. We encounter a rare old Gifu sake, Daruma Masamune. Beautiful golden color. Mellow mouthfeel Thick, deep sweetness and The flavor and richness are well rounded and robust with maturity. It has no sweetness or peculiarity. It is easy to drink like a refreshing plum wine. It is also delicious when mixed with other drinks. === A bottle of sake Ingredients: rice (domestic), rice malt (domestic) Ingredient rice:Nipponbare Rice polishing ratio: 70 Alcohol content: 15-16%. === ★★★☆☆☆☆

I'm sorry. So this is what old wine smells like. Like Shaoxing wine. Like soy sauce. Sweet... It's a bit salty. The taste is the same. It's good to have something like this once in a while.
