This is a limited edition product that has just gone through one summer of five-stage brewing for old sake of Daruma Masamune. It already has a yellowish color, like old sake.
It already has a yellowish color and a hint of musty smell like old sake.
However, in the mouth, it is rather sweet like honey and has a sharp taste.
It seems to go well with blue cheese. I paired it with dried fish and it went well. 🤗

An aged sake we've had before.
This is the one we compared to AFS 1975 while we had the impression of AFS 1975.
This is also delicious and a completely different sake from AFS.
Each sake has its own character, and each has its own new sake and its own aged sake.
The comparison of aged sake itself is meaningless... I was taught such an obvious lesson.
Matured Old Sake
It was getting a pretty good aged look.
It had been sitting in a storage room, so it might have ended up being damaged by the heat. ....... I decided to open it.
I put it in there for 8 years to be with my daughter when she came of age, but I thought it might not be able to withstand the temperature changes for another 12 years. It's not easy to keep space in the fridge.
However, I was impressed by the yeast and the strength of the production.
I wondered if it could be aged without opening the bottle. I think it could have been matured without opening the bottle, but the mildness of the aging process and a little bit of a tangy taste makes me think it was time to open the bottle. Well, it's always a gamble when it's time to start aging, isn't it?

Enjoyable with a good sweetness and acidity.

(Masamune is a common name for sake, apparently.
Aged sake is sweet and mellow, but has a strong taste. If you like Shaoxing sake, red sake, or Maimito, you may like it. I'm not a fan, I guess. It's delicious, but I just wasn't looking for this sweetness and peculiarity right now!

It was made using 100% Hatsushimo, an edible rice produced in Gifu Prefecture.
