La Maison, also known as "The House". It's a limited edition sake for drinking at home, so you have to buy it! I saw someone drinking it in a wine glass, so I tried to copy them and drank it in a wine glass😊. The aroma is peachy? The taste is sweet, but the aftertaste is refreshing. I'm not sure if it's because of the low alcohol content, but I can drink it easily😋. I had it with shabu-shabu and morokyu, and it was a delicious wine that didn't fight with the food.

I wanted to try it once. The expensive sake of Nishida Shuzo Zenchidori (Uto) I couldn't read it at first. If you miss out on this kind of sake I couldn't make up my mind, but I just bought it. This is my favorite new product from Saira. As soon as I took a sip, I knew it was going to be good. The aroma is lactic acid and fresh muscat. Happy. It is sweet and sour, or rather sour and sweet, and the sourness is dominant. The sourness is relatively firm, which is good for summer. It is also good that there is a sense of gas. The sourness continues until the aftertaste, and finishes with a slight bitterness. The sweetness or umami remains on the tongue, so you won't get bored until the end. After R, now S. No stock of X this time, but I could drink it only once this year. S is more gentle and sophisticated than R in general. The aroma is lactic acidic and citrusy. I feel the lactic acid aroma is stronger. I feel the sweetness more strongly than R. Of course, there is a sour taste, but the sweet taste comes out slightly more. There is also a sense of gas, and the overall balance is exquisite. In the aftertaste, both sweetness and sourness can be felt, and at the end, the sweetness remains on the tongue. However, it is never unpleasant. The X was not very appealing and had a rather impersonal feel to it (it became impressive after a few days), but the S made a good impression from day one. No need for attaches, it lingers. Both R and S were very tasty.

I finally got my hands on a Yono Tori. I've been able to drink it at the store But this is the first time I've been able to buy one for home drinking! I had a hunch, didn't I? Even though it's only for those who buy over 3000 yen You don't have to buy a sake you don't like. You can just buy some Collage As long as the fridge is empty. It's no problem at all. It's my favorite of the Shinsei (out of all the ones I've had). I like it more than No.6 X and S. It has a solid sweetness and and a refreshing taste. I can drink as much as I want. This and Koryu's Kijoshu are my two favorite Kijoshu. And someday you'll see a visible pin (invisible pink unicorn🦄) I want to try it too!

The bitterness comes to the aftertaste, but the mouth is filled with the umami. If it's this rich, you'll want to throw in the ice that's mentioned on the label, so I did. When ice is added, the sweetness comes forward and the acidity seems to hide in the shadows. Hmmm... I can't quite grasp it.

I decided to take my time with the Collage Natsu Gin and threw in an extra bottle of this when I wasn't drinking enough. I've had Ilya Thornton, Liasake Naturel, Sis (Ikeda), An, Sis (Normal), and probably the last of the season, duh. First conclusion, it's delicious. The aroma is of dried grapes. It is a unique aroma, but very attractive. When you taste it, the sweetness asserts itself first, and then the crisp acidity continues until the aftertaste. The sweetness is dominant, which is very satisfying because I've heard that yeast No.2 has a strong sweetness. Although there is a slight bitterness in the aftertaste, it seems to change to astringency before long. The lingering sweetness, acidity, and astringency continue comfortably, and then it is gone. The sogas are all delicious and each has its own characteristics, making them fun to drink. I'd like to try the remaining No.3, No.4, and No.5 (are there more?) ) are also something I'd like to try sometime.
