I have been curious about WAKAZE for a while and finally bought it.
This is the first sake made overseas.
The aroma is grain-like and has an atmosphere that is not sake. At first it is like a white wine, but the sourness and the atmosphere in the second half give it a sake-like character.
The sourness is similar to sake made by reproducing ancient methods, such as Gonin Musume or Bodaihashiro.
I thought I couldn't buy it in Kansai, but it came in spot. So I'm not sure if it will be available in the future. Gassy, melon- and lychee-like atmosphere. It's sweeter than I expected. I wonder if it would taste even better fresh? It seems to be brewed with tap water, but I don't particularly care.
I guess I'll just have to hope that Asano Sake Brewery will have an Edo Kaijo fair for the sake.

This is the first time I've ever had a sake that uses centrifugal separation. It has a juicy and gorgeous taste. The sweet and savory nuance reminds me of Takachiyo and Hanayoi.
I've had it at a tasting but this is the first time I've bought it. It has a fruity and sweet aroma. It has a pleasant sense of slight gas. Fresh and light.
This sake was pressed on the first day of the year. It is sweet, quite light, and easy to drink. It's not just this one, but all Shinsei, but there's almost no alcohol at all. This product is said to be a reprint of the first year's Winter Moon, which was released 21 years ago. It is said to be sweeter than the current version, but it is certainly sweeter than the Winter Moon sold now. It seems to be thicker. The label is also totally different from the current one.
