My favorite new sake from Kimasa. It's junmai, but it has a great aroma. Muscat type? It has a cucumber-like acidity and sweetness like Kuroryu. And it has a rough strength that is typical of new sake. Is this a Kimasa? It is surprisingly gorgeous. It is not like Kimimasa in a good sense. I met a new side of Kimasa.

Light snow today. It's getting colder, which is good for drinking Fukamari. We started with hiya (sake), followed by lukewarm sake, according to the label on the bottle. Seasonal fit for the season: spinach with pork and black sesame seeds, namulu style. The hiya...tastes a little harsh. The harshness of the sake's yeast yeast yeast is more noticeable this time. I would like to say that it is delicious... but my physical condition is not so good today. I am still a little annoyed by the unique strength of the sake. I wonder if it's because the leftover Izumibashi from the last time I had it on an empty stomach was quite effective. The condition of the drinker is also important.

Tenmei's heated sake, Flame. BY30 is an aged version of... well, how many years is it aged for? Oh, I should think BY2018. That would make it five years... The aroma is slightly grapey. It has a sweetness and acidity like a grape. I wonder if it is the result of the ripening process. I remember I drank a regular flame a few years ago, but it didn't impress me so much...
