十八盛usagi no kimochi 無濾過生原酒純米原酒生酒無濾過 こるね<Clearly, sweet and sour, with a hint of bitterness.
The moment I found it, I said, "What is this?"
No, I know what it is right away. It is the mysterious fifth bottle of the black-and-white animal series, of which four types were completed last year. I didn't know there was such a thing out there!
It has quite a bit of color, doesn't it? It's a transparent bottle, so you can clearly see the light yellow coloring. Aged?
The aroma is faint muscat and alcohol. It is mild.
When you put it in your mouth, it has a clear sweet and sour taste from the beginning, followed by a bitterness. The umami is moderate, but instead the bitterness gradually builds up.
I checked and found that this rabbit was an extra edition that had just been released in November. It seems to be a blend of three types of Tagaji's main brand, unfiltered, unpasteurized sake. Huh? Maybe it was a zodiac sake for the New Year?
To use a Ghibli analogy, Makimura-san from "From Up on Poppy Hill". She is the slightly chubby older sister who lives in Poppy Hill House. She is a business girl who works at the foreign consulate in Yokohama. Amazing!

Long time no see, Mr. Reblom.
The secondary ingredients of this sake are chestnut and vanilla. I can't even imagine what it tastes like. Let's drink it then.
The color is a uniform light cloudy.
The aroma is mild lactic acidity. There is a slight hint of chestnut.
In the mouth, it is suddenly sweet and sour! As it swells, the sweet and bitter alcohol also comes out, and the taste is even more impressive. The sweet and bitter alcohol aroma is also wonderful. I don't feel much vanilla, but I think there are chestnuts in the back of the bottle.
The flavor itself is not rich, but it has a strong presence. However, it cuts through quickly and has a clean aftertaste. The last time I drank Saliva, it was at 14.5 degrees Celsius, but this time it has a strong alcohol taste.
If I were to compare it to Ghibli's "Spirited Away," I would say that it is like "Otori-sama" from the movie "Spirited Away. He is a god like a chick. It's cute that everyone is crammed together in the bath. But he is big and has a strong presence!

こるね<The sweet Al goes from soft to slow to strong.
The aroma is slightly sweet and sour.
The mouthfeel is smooth and mild, like water. Then, it opened up, and finally, the sweet-alcoholic taste was suddenly released! It changed dramatically. Interesting!
As the temperature rises to room temperature, the opening of the flavors all move forward. The sweet and tasty acidity comes out in the mouth, then slowly in the mid-palate, and finally, "wham"!
It was a powerful sake with a sweet-tart taste and high alcohol content. It was delicious!
If I were to use a Ghibli analogy, it would be Toki from "Princess Mononoke. She has the strength to survive even in a harsh environment, but she is also cute. She is the best woman in Princess Mononoke. When she first appears in the movie, she says she is not a good guy, but in the latter half of the movie, when she starts to show her strength, she becomes more and more attractive.

こるね<Yamahai, a mild and gentle sake.
The aroma is faint, with a beautiful honey-sweet lactic acidity.
When you put it in your mouth, it starts with a mild acidity and becomes a delicious taste. There is a slight sense of yamahai, but it is also gentle. It can be classified as a light classic.
At a cool temperature (5℃), it is a shy and quiet wine. As the temperature rises, the flavor expands and becomes more delicious. I like it at room temperature. It also looks good heated.
The entrée continues to be a crispy cheese cracker. I was a bit intimidated by the richness of the cheese when it was cold. At room temperature, it has the same gentle and quiet character, but it has a strong core and goes well with the rich cheese. It is not against the cheese, but rather gently wraps it around you. It's soothing!
I know it's not Ghibli, but I can compare her to Kasumi Tendo from "Ranma 1/2. She is just a gentle, healing older sister. What, 19 years old?

Ooyama特別純米 十水 大にごり原酒特別純米原酒にごり酒発泡 こるね<Pirishwan: Dense sweet alu, large nigori>.
The color is pure white.
It has a tangy, carbonated taste. It is thick and dense like yogurt, but has a strong carbonation, and the clear lactic acidity and a hint of sweetness are like yogurt. From there, the sweetness swells up, and finally, the high alcohol content blows up! The bitter-sweet flavor is then released. Yum!
I highly recommend this sake to those who are okay with plain yogurt, who like sweet, and who are okay with high alcohol content. Oh, that's me.
To use a Ghibli analogy, the lady in "Castle in the Sky" was 16 years old. The lady in the movie is 20 years old. And her daughter Madge is 3 years old, so she must have been 15 or 16 when she got married. Such a powerful 16-year-old girl fell in love with a macho old man who was more than 20 years older than her, forced her to marry him, and soon became pregnant. She then gets married to a macho man over 20 years older than her, gets pregnant, and then completely turns the old man into her buttocks. Is there any divine artist who can draw an illustration or manga that says, "I'm a 16 year old girl who is in love with a macho man who is over 20 years older than me.

こるね<Mellow, sweet, bright, erotic, slightly bitter.
I compared it with the previous post. I wonder what the non-nagori one tastes like.
Wow! Totally different!
Sweet! Yum! Yuck!
The aroma is honey melon. It's totally different at this point.
In the mouth, there is zero carbonation that was there so much in SNOW. Why?
The mouthfeel is a mildly sweet bonbon! Melon honey with a hint of lemon. When it touches the air in the mouth, the sweetness blows up even more. It's so sweet. And yet it cuts beautifully.
There's also a hint of ripeness, but is that just my imagination? I looked at the back label and found that this one was manufactured in March 2021, one year before SNOW.
The white Imi white and white SNOW are completely different, but both were very tasty.
I know it's not Ghibli, but the analogy is "Tsugumomo". A very erotic manga that your family should never know you are reading this kind of thing.
It has a serious bitterness sometimes, but basically it's a cheerful and fun battle thing.

White nigori sake.
The aroma is of a lactic acid drink with the flavor of rice. It also has a banana, rumney, summer tangerine, and mint aroma.
In the mouth, piquant and slightly carbonated. In the back, marshmallow peach coconut, refreshing yogurt and a hint of lemon. All the while, the microcarbonation tingling continues. Ummm... !!!!
And the mouth-watering aroma that fills your mouth from the moment you drink it is amazing! It's like the fresh sweetness of marshmallow and the subtlety of rice flowers condensed together. Wow!
In the latter half, the umami of the rice is clear. Plenty of sweetness. The bitterness of nigori (bitter taste) is also lovely. There is also acidity. Each of them is assertive, but the overall flavor is strangely cohesive.
It was a wonderful sake. It was so impressive that I unusually had another one.
If I were to use a Ghibli analogy, I would compare it to Kiki (age 17) in "The Witch's Delivery Service. Kiki in the Ghibli movie is 13 years old, so four years later. She has grown up to be prettier and is at the age where she knows love.

こるね<A sense of maturity, a huge explosion of deliciousness.
This sake is made by Mukai Shuzo in Kyoto. Speaking of Mukai Shuzo, Ine Mangaka is famous.
The aroma is a mildly matured lactic acidity. Hmmm? Aged? The production date is November 2022, but was it left in the brewery? There is also a sense of nuts, rice flowers, and bamboo grass.
The mouthfeel is mellow and acidic. Then, just when you think the umami is starting to come out, it explodes into a huge explosion of umami! The aftertaste is also umami astringent.
The aftertaste is also umami astringent, with only a hint of sweetness. This is a classic food sake. On its own, I honestly didn't like it very much. If you want to match it with a meal, it would be better with a little more saltiness.
If I were to compare it to Ghibli's "Red Pig," it would be the blonde-haired, square-faced, and rugged member of the Air Pirate League. He seems to be a descendant of the Normans. The Normans are a northern Germanic people, in essence, Vikings. Vikings have a strong image of pirates and are connected to air pirates. However, in historical fact, they did not specialize in plundering, but were traders.

こるね<Fruity, with a softly acidic taste and a delicate flavor.
No.17 is the number of the yeast. It is Association No. 17 yeast. It is rare. It's the first time I've had it. Officially, it seems to be Association No. 1701.
The aroma is faintly melon.
In the mouth, it has a fruity, citrusy, mildly acidic sweetness. From there, the acidity is soft and the flavor is gradually sweetened. The nose has a hint of acidity and woodiness. There is a slight astringency in the aftertaste.
It is delicious. However, I am not sure what part of it is characteristic of No. 17. It is good that the flavor does not collapse when the temperature rises.
The specs are as follows
Sake Brewer : Fumigiku Shuzo (Toyama City, Toyama Prefecture)
Sake Brewing : Junmai Nama Shuzake
Rice: Gohyakumangoku
Rice polishing ratio: 60
Alcohol percentage: 16% ・・・ high
Yeast: Association No. 17
Production date: October 2022
It is a blue guy, a.k.a. Naka-Totoro of "My Neighbor Totoro" in the Ghibli series. It is also known as the blue one. It is rare and not seen very often. It is cute, but it also has a deep natural beauty.

Two gorillas on the label. two gorillas, two gorillas, two gorillas, two gorillas, two gorillas, two gorillas, two gorillas.
Let's get back on track and drink.
The shoulder label says "fluffy and tender," but this is not at that level by any means. It's thick and sludgy and pure white.
But there is almost no aroma. I thought it might be lactic acid like the Futa-Utsugi Nigori I had the other day, but it is surprisingly mature.
The mouthfeel is still a thick sludge that feels like grains of rice. But the taste is mildly sweet and acidic. From there, the sweet and sour taste is followed by a hint of bitterness. Yum!
Even though the sake level is -58, it is not sweet at all, and has a freshness that is hard to understand. The aroma is sweet and bitter with a hint of alcohol.
I thought it was supposed to be the dessert of the day, but it was a mysterious refreshing sake. It was soooo good!
If we compare it to Ghibli, the theme song of "The Cat Returns", "Kaze ni Naru" is a very refreshing masterpiece. I love this song. Maybe I even like it more than the movie itself.

Sake from YK3 Sake Producer in Canada.
YK3 Sake Producer was founded by three Japanese in 2013.
The aroma is of shiitake mushrooms, nuts, and a hint of honey. Yes, it is unique.
The mouthfeel is smooth and watery. What? But then, a unique umami taste comes in. And then, an unidentified, deliciously astringent aftertaste. What is this? It's so peculiar.
The specs are as follows
Sake Brewer : YK3 Sake Producer Inc.
Sake: Junmai (pure rice)

こるね<A gentle taste, a mild aroma, and a mild flavor.
Manufactured by Yamori's Toshimaya Sake Brewery and sold by Kanda Toshimaya, a member of the same group. It is sold only at the Toshimaya Rita-Shop in Kanda and one other company, and is not even sold by mail order, making it an extremely rare sake!
The aroma is a very mild lactic acid rice flavor.
The mouthfeel is clean and gently acidic and sweet, with just a hint of umami. The mouthfeel is clean, gently acidic and sweet, with a hint of umami. The taste is very gentle but well balanced. The fragrance is mellow and elegant. Delicious! It feels so good!

The sake is like the character Okinu from "The Wind Rises" in Ghibli's "The Wind Rises. She is the maid who is saved by the main character, Jiro, in the scene of the Great Kanto Earthquake in the beginning of the film. She is a beautiful woman with a profoundly modest appearance.

The aroma is softly sweet and bitter with a gentle nigori taste.
When you put it in your mouth, it is soft and sweet. It is fresh, but has a gentle sweet and sour taste. It is quickly cut off, and there is a faint sweet and tasty aftertaste. It disappears before you know it. It's beautiful.
As the temperature rises, the banana melon aroma becomes more pronounced and the sweetness is richer. Oh, wow! Delicious! I like it cooled down (15℃).
The le lac I saw earlier was very erotic. But Denshogiku-san is cute, fresh and slightly erotic. Both are so delicious!
To use a Ghibli analogy, it is like the line in "The Witch's Delivery Service" where Kiki is soaked in the rain, catches a cold, and says "No! I love Kiki's voice here, with the sweetness and shyness mixed in with the cold's harshness, and it's somehow sexy. It's just a cute and refreshing micro-eroticism.

こるね<Fresh, erotic, sweet and mellow.
The Hakubanishiki Autumn Ripening we had the other day was very impressive.
The aroma is clear melon and rice flavor alcohol. The aroma is very fragrant. This looks delicious.
When you put it in your mouth, you will feel fresh, slightly tangy, and sweet. From there, it is sweet and umami. The deep umami-centered overtone is also wonderful. The umami lingers for a long time in the aftertaste, but this may be the first time for me to taste such a gentle and rich umami-centered aftertaste.
It is beyond sexy, it is even erotic. To put it another way, it is erotic. It is one of the most erotic wines I have had this year. It's also very erotic, with a sensual eroticism that you can feel the body temperature of the drink. I think this drink needs to be designated as an 18-restricted drink, don't you?
It's not Ghibli, but if I were to use an analogy, it would be Nana from the manga "Nana and Kaoru. Do you know this work? It is a coming-of-age romantic comedy with a high school student as the heroine and SM as its theme. Nana is its heroine. Ruta Amazume's drawings of her fleshy body are very erotic.

こるね<An ensemble of various flavors.
Which part of this sake is an ensemble (ensemble)? Sakiyami's blended the blame of all three types of yeast: pink from No. 18 yeast, gray from No. 9 yeast, and splotchy color from No. 14 yeast. I have no idea what it tastes like.
So let's actually drink it.
The aroma is faint and refreshingly acidic and tasty.
When you put it in your mouth, you will find a fruity sourness with a hint of sweetness. Then the umami comes in. You may think it is a gentle and gorgeous sake, but at the end, you will be surprised by the umami bitterness. It is a sake with interesting changes over time.
None of the flavors are outstanding, but they are all strangely unique. As the name "ensemble" suggests, it is not a unison of instruments playing the same notes, but a variety of instruments making music with various sounds. Delicious!
To use a Ghibli analogy, Ayaka from "Marnie of the Memories". She is the girl with the red round glasses who moved into the mansion where Marnie was. She has a slightly unique atmosphere. She is not beautiful, but she is cute.

こるね<No curds, soft acidity, sweetness and mildness.
The aroma is that of a lactic acid beverage with a refreshing sour-sweet alcohol.
When you put it in your mouth, you can taste the acidity, sweetness and mildness. The acidity is clear, but it is not unpleasant because it is soft and not sharp. Delicious!
As the temperature rises to room temperature, the umami comes out and it becomes more like Yamahai. That is also good. But personally, I prefer it cold.
If I were to use a Ghibli analogy, it would be Taeko (27 years old) from "Omohide Poroporo". It has both sweetness and freshness, but it also has a mature flavor.

Following the previous post, another limited edition sake from the Shinshu Jizake Hanpukai.
The aroma is of gentle white grapes and a hint of refreshing alcohol. It is beautiful.
In the mouth, it has a gentle sweetness. I thought it would be more gentle than the Yamada-Nishiki I had just tasted. But then, in the second half, the sweet alcohol hits! It has a strange flavor like hazelnut liqueur. Yum!
I also like hazelnut liqueur such as Frangelico. But I've never had a sake with such a flavor.
As it warms up, the sweetness opens up even more. The sweetness is not strong, but it is very impressive.
If I were to use a Ghibli analogy, it would be Sophie, the main character in "Howl's Moving Castle. It's not a strong assertion, but it clearly has a special power. And the second half is sweet.

こるね<The syrup is suddenly sweet and bitter.
This is a limited edition sake from the Shinshu Jizake Hanpukai, which is organized by Jizakeya Miyajima, a hard-core sake shop that only sells local sake from Nagano Prefecture in Shinshu.
The aroma is of mildly sweet red grape syrup. Wow, this looks delicious!
When you put it in your mouth, you will suddenly taste sweetness and bitterness. The sweetness is centered around the sugar-rich sweetness, and the umami and acidity are gentle. Yet it has depth. In the latter half, a pleasant bitterness also comes out and finishes the taste. Yum!
I know it's not Ghibli, but I can compare it to Nodame, the main character in "Nodame Cantabile. She has a sweet romantic brain and perverted behavior, but her talent is outstanding. Especially in the latter half of the story, when she starts to worry.

HokaKEGDRAFT 純米吟醸無濾過生原酒純米吟醸原酒生酒無濾過 こるね<Fresh, slightly tangy, fresh, sweet and bitter
The KEG DRAFT SAKE series is a 10L tank sake server that maintains the flavor and freshness of freshly squeezed sake for a long time. This time, we will introduce you to Toyoka, a sake produced by Toshimaya Co.
The aroma has a faint taste of rice.
In the mouth, it is slightly slightly carbonated; KEG is known for its strong carbonation, but this one is a bit more reserved. Then, a lovely sweetness and a refreshing acidity pop → bitter flavor. The bitterness is clear, but it is also somehow fresh and cute. From the image of the aroma, I thought it would be more umami type, but it was a little different, a fresh and refreshing sweet and bitter sake. It's so delicious!
If I were to use a Ghibli analogy, I would compare it to Anna, the main character in "Marnie of the Memories. She has a bitterness in her heart due to her youth, but she is cute in that way as well.

こるね<Fruity, less sweet, delicious melon.
This sake is made by putting real fruit juice in a sake tank and fermenting it together with the unrefined sake. Because it contains a secondary ingredient, it is classified as "other brewed sake," which is outside the definition of sake.
The aroma is already clearly melon. It is extremely fruity. But strangely, it doesn't seem so sweet.
When you put it in your mouth, you can taste the fruity, acidic sweetness of melon. But it is still very fruity, but not too sweet. It is like the not-too-sweet part near the skin of the melon. Then, in the latter half, the umami flavor comes in.
It is strange to find such a melon with such a delicious taste. The aftertaste is also a strange melon with such a strange umami. The aroma is also filled with melon and umami.
It was a strange sake. If melon juice was added, it could have been sweeter.
If I were to use a Ghibli analogy, it would be Lettie from "Howl's Moving Castle". She is the sister of the main character Sophie. She is a gorgeous beauty and the signature girl of the cafe. But I feel she is not as sweet as she looks.
