This sake is made by Mukai Shuzo in Kyoto. Speaking of Mukai Shuzo, Ine Mangaka is famous.
The aroma is a mildly matured lactic acidity. Hmmm? Aged? The production date is November 2022, but was it left in the brewery? There is also a sense of nuts, rice flowers, and bamboo grass.
The mouthfeel is mellow and acidic. Then, just when you think the umami is starting to come out, it explodes into a huge explosion of umami! The aftertaste is also umami astringent.

If I were to compare it to Ghibli's "Red Pig," it would be the blonde-haired, square-faced, and rugged member of the Air Pirate League. He seems to be a descendant of the Normans. The Normans are a northern Germanic people, in essence, Vikings. Vikings have a strong image of pirates and are connected to air pirates. However, in historical fact, they did not specialize in plundering, but were traders.
