When you put it in your mouth, it has a clear sweet and sour taste from the beginning, followed by a bitterness. The umami is moderate, but instead the bitterness gradually builds up.
I checked and found that this rabbit was an extra edition that had just been released in November. It seems to be a blend of three types of Tagaji's main brand, unfiltered, unpasteurized sake. Huh? Maybe it was a zodiac sake for the New Year?
