The mouthfeel is smooth and mild, like water. Then, it opened up, and finally, the sweet-alcoholic taste was suddenly released! It changed dramatically. Interesting!
As the temperature rises to room temperature, the opening of the flavors all move forward. The sweet and tasty acidity comes out in the mouth, then slowly in the mid-palate, and finally, "wham"!
It was a powerful sake with a sweet-tart taste and high alcohol content. It was delicious!
If I were to use a Ghibli analogy, it would be Toki from "Princess Mononoke. She has the strength to survive even in a harsh environment, but she is also cute. She is the best woman in Princess Mononoke. When she first appears in the movie, she says she is not a good guy, but in the latter half of the movie, when she starts to show her strength, she becomes more and more attractive.
