The shoulder label says "fluffy and tender," but this is not at that level by any means. It's thick and sludgy and pure white.
But there is almost no aroma. I thought it might be lactic acid like the Futa-Utsugi Nigori I had the other day, but it is surprisingly mature.
The mouthfeel is still a thick sludge that feels like grains of rice. But the taste is mildly sweet and acidic. From there, the sweet and sour taste is followed by a hint of bitterness. Yum!
Even though the sake level is -58, it is not sweet at all, and has a freshness that is hard to understand. The aroma is sweet and bitter with a hint of alcohol.
I thought it was supposed to be the dessert of the day, but it was a mysterious refreshing sake. It was soooo good!
If we compare it to Ghibli, the theme song of "The Cat Returns", "Kaze ni Naru" is a very refreshing masterpiece. I love this song. Maybe I even like it more than the movie itself.
