This sake was awarded the number one prize for 12 consecutive years from 2006 to 2017 in the "Professional's Choice of Sake to Go with Eel," an annual competition held by the Japan Famous Sake Association! It was even inducted into the Hall of Fame. Amazing!
The aroma at room temperature is powwow honey-sweet, fluffy alcohol. Yes, this and this.
When you put it in your mouth, it's like a sweet and sour taste. There is no fruity taste at all, but lactic acid acidity and honey sweetness. There is a good sense of maturity. There is not much bitterness, but there is a pleasant astringent taste. Of course, the umami taste also comes out.
The individual flavors are not that strong, but as a whole they are quite robust. The aftertaste, however, is a nice sweetness. It is very good. This firmness is definitely something I would like to pair with eel.
If we compare it to Ghibli's "From Up On Poppy Hill", it is like Chancellor Tokumaru in the movie "From Up On Poppy Hill". He is the chancellor of Konan Academy, where the main characters attend, and the president of Tokumaru Bookstore, which is headquartered in Tokyo.
