ヤスベェI've been practicing sake tasting for a while now and haven't had time to enjoy sake, so today Kaorin and I went walking in the Expo Park with sake.
The sake we brought was Omine-san's cup of hanadbi sake.
I saw Pon-chan drinking this sake before and wanted to try it, so I went looking for it.
It was a sake with a sweetness that was easy to drink and could be enjoyed even under a fine autumn sky 😀.
Finally, tomorrow is the sake tasting test for the second round of the sake diploma 😀.
Regardless of the result, I'm happy because once tomorrow is over, I'll be able to enjoy sake again purely and without hesitation 😇. ma-ki-Hi Yasbay, how are you?

This store always has several Nabeshima sake on tap with no sales limit, so it's easy to plan a Nabeshima sake drinking comparison😇.
Earlier this year we did a 6 bottle Nabeshima drinking comparison and at that time we chose the Kishisuku Jun Dai, but this time we chose the Junmai Ginjo 😇.
The jun-dai had a very strong ginjo flavor, but the junmai ginjo had a moderate ginjo flavor, and for me, the balance between the ginjo aroma and the feeling of drinking it was very good and delicious 😀.
I enjoyed my first Kitashizuku Junmai Ginjo 😇 ジェイ&ノビィHi Yasbaye 😃.
We too have a liquor store near us that carries a large selection of Nabesama 😊 and we feel safe to buy it anytime👍.

The stores that carry Nabeshima-san are extreme 🤣.
Some liquor stores carry all kinds of Nabeshima, and some carry it but treat it as a pre-sake 🤣.
Jungin was delicious😇 boukenSake that Yoohee and I bought together when we visited liquor stores in Osaka.
The hi-ire sake was good, so I bought the draft. It is fruity and sweet, but unlike the hi-ire, it has a complex and unique atmosphere.
The overall taste is sweet, but the latter half of the taste is like a Sanin sake.
It has an atmosphere similar to that of Honorary Ikezuki.
When the temperature rises, it has a strong nutty taste. I don't know if it was laid down in the brewery or not, but I guess it was. ゆーへーbouken, here's another one 💡.
I also bought it and drank it pretty early, but I had the same impression, I thought it was a bit different from what I expected.

This is the second day of drinking comparison of Kuroten Hi-ire 😀.
This is just my impression and opinion, but the new Kuroten Hi-ire is tasting more and more like 寫楽さん's taste, and the taste is getting away from the previous master brewer's Kuroten 🤣.
Some people say that the taste doesn't change that much with a different master brewer, but in my opinion it's completely different... of course that's just my opinion, I'm not a taste person 😅.
The president of Otters says that if you rely only on the master brewer's blueprints, the taste variation from year to year will be too large, so Otters has eliminated the master brewer and uses data and manuals to minimize the taste variation as much as possible. In other words, the taste changes depending on the sensitivity of the master brewer, right?
I asked chuin-san for his opinion, and he said that it is impossible to take over the master brewer's blueprint without brewing several times together in order to take over the brewery's flavor when there is a change of master brewers.
However, it would be rude to make other people think that my amateur opinion is different from theirs, so from now on I'll just keep it in my memory and not comment on it 😅.

This is a drinking comparison between the former toji and the new regime of Amami's Kurotemi Hi-ire 😀.
In Hakuten Sei, I gave the new regime a bad review 😅.
On the contrary, I praised the new system in Momoten 😅.
Today we're comparing the same standard Kuro-ten Hi-ire at the same time 🤣.
Conclusion... both are delicious, but it was clear that the taste direction is different 😀.
My impression is that the former master brewer's Kuroten is a gorgeous and bouncy sake, while the new master brewer's Kuroten is a more relaxed sake 😀.
I didn't tell Kaorin what kind of sake it was and let her compare the two Kurotens and 寫楽さん, but she probably honestly said that the new Kurotens and 寫楽 were from the same lineage and the former toji's were from a different lineage 😀.
It comes down to preference... but I still preferred the taste of Mae Toji's 😀.

Since we're in May, I'm going to end this project once and for all 🤣.
The last one is the most sinful sake for my wife and I😅.
Since today's spring, we started to drink Sake, and we came across this Kido's Haru no Kaorufu 🤣.
Anyway, I found out how delicious sake is and bought it again and again to decorate our dining table, but I remember how sad I was when I couldn't buy it after spring 😅.
But after spring passed, I was sad when I couldn't buy any more of this sake anymore 🤣.
Delicious...I remembered the taste from last year and the excitement came back😇.
It has the same line as yesterday's spring sake from Jyuseki, with a gentle sweetness and well-balanced taste that spreads in the mouth and disappears with a slight spiciness at the end, so it goes well with meals 😀.
Of course, the taste is different from that of Jyuseki's, but I realized again that this kind of gentle balance is the charm of spring sake 😀.
We will end this project for now, but there are still some spring sake left in the fridge, so we will open them one by one and enjoy them for as long as possible 🌸. ワカ太Good evening, Yasube!

This is the first time I've had the raw Kitashizuku from Nabeshima.
Kitashizuku is a Hokkaido sake brewing rice following Hatsushizuku, Ginpu, and Comet.
The quality of the sake is soft and refreshing with little bitterness, and is said to be a good combination of Ginpu and Comet 🤔.
It is a Junmai Daiginjo brewed with a 40% polished rice ratio, and is only available in limited season.
The appearance is warm crystal.
The nose has a fruity upfront aroma of sweet apricots, fresh yellow apples and quince, with citrus nuances of acidity at lower temperatures, which fades as the temperature rises.
It also has a rice aroma, like that of freshly ground rice.
It has a smooth mouthfeel, with a soft fruity and wasanbon-like sweetness that mixes with the acidity along with a beautiful umami.
From the mid-palate, the sweet fruity overtone leaves a sweet and umami taste on the tongue, while the acidity gently rises to the back of the throat with a slight stimulation and a hint of bitterness.
The lingering finish is long, with a slight bitterness, but it is sharp and does not linger.
At low temperatures, it is fresh, clean, and pure, but as the temperature rises, the stimulation of acidity and bitterness can be felt.
Well, a beautiful taste with a sense of quality. ☺️

The four bottles up to Purple Nabeshama were within the Nabeshima taste I had expected, but New Moon and this Kitashizuku were way out of my expectation of Nabeshima's taste 😅.
I was surprised by New Moon when I drank it yesterday, and I was surprised by the taste of today's Jun Big Tashizuku, which is an even cleaner or clearer version of Now Moon😅.
But I'm really glad I did this 6 bottles parallel drinking comparison 😀.
If I had drank each of the 6 bottles, I probably would have ended up saying that each one was delicious, but thanks to this comparison, I was able to learn the depth of Nabeshima Sama 😀.

This sake is not as impressive as Tokujun in terms of taste change when heated, nor is it as impressive as Ihyakumangoku when drunk cold, but it is a versatile sake that tastes great both lukewarm and cold 😀.
In a sense, a single bottle of sake that tastes great both warmed and chilled is an amazing existence 😀.
I think the best taste was when I left it in a glass for a while to test it out and let the temperature naturally rise from refrigerator storage temperature to room temperature 😀. ポンちゃんHi Yasbay 🐦.

First of all, the orange in the hiya tastes as good as it did on the second day of opening 😀.
Jungin Omachi has opened up and tasted better than the first day 😀.
The most surprising thing today was the green special junmai hi-ire 😀.
It tasted so much better when it was heated up ❤️
I would definitely recommend drinking the special junmai hi-ire lukewarm from the first day of opening the bottle 😀.

Last year around this time, when I was just starting to drink sake, I wanted to know how different sake rice tasted 😀 I compared them with Kaze no Mori's 807 series.
It's hard for a beginner to tell the difference unless you actually put them next to each other😅.
This time we prepared 6 bottles of Nabeshima-san's sake rice, different brewing methods, and different raw and hi-ire styles to see if they have grown up a bit since last year 😀.
We started with a special junmai, a junmai ginjo Akaban Omachi, and a junmai ginjo Gohyakumangoku raw 😀.
Today, right after opening the bottle, I found the raw Ihyakumangoku to be the most delicious, with the most fruity taste and aroma 😀.
Tomorrow, I think the other two bottles will probably open up in taste.
I'm looking forward to see how my impression will change 😀.
By the way, Kaorin felt the special junmai was the tastiest and the raw was the heaviest 😅.

This is my principle, but I stir the lees thoroughly before serving 😀.
I think the toji-san designs and brews the sake with this mixed taste, so I feel sorry for him to drink an incomplete sake 😅.
Of course, I understand the feeling of wanting to drink only the supernatant separately, so I don't mean to deny that way of drinking 😀.
But Hagi no Tsuru's light nigori is very fruity and delicious 😀.
