It's been a long time since I've had a Sentori assemblage. Oh yes, this acidity. I wanted to try drinking Akamo too. At first I was surprised by the acidity, which I hadn't had in a while, but I soon got used to it. The second day, the sake became milder and easier to drink. It also has a nice sharpness, so I guess it can be drunk with food.
I have only a vague knowledge of brewing forests that I have seen before. I asked the owner about the sweet taste and he recommended it. It is very fruity, with a full aroma and a clear sweetness. I opened it without any prior information and was somewhat blown away (sweat). It has a fizziness that I like, but I don't think it is suitable as a food wine, so it is for enjoying the sake by itself.

This Nanada is my first low-polished sake. I tasted it without any expectations and was surprised by the fruity aroma like ripe bananas and the full-bodied sweetness, richness, and umami of the rice.

This is my first time to drink Tenmei's Momoten.
Recently, I have been consciously trying to buy nigori sake, but many of them have a strong bitter aftertaste, which I found a little bitter.
It may be a good accent for those who don't like the sweetness of nigori sake or those who like dry sake, but..,
The first day I opened this Momoten, I felt a bitterness in the aftertaste and thought "I missed it again..." But when I drank it two days later, the bitterness disappeared and it was transformed into a slightly sweet and sour and refreshing sake 🍶.

Invited by a friend, I brought a bottle of Oshinshu Junmai Ginjo purchased at Suzuki Mikawaya in Akasaka.
This sake is full-bodied and well balanced.
The aroma is slight, but as it rolls around in the mouth, the acidity and umami blend together.
It does not have the gaseous feeling that is typical of Taishinshu, but it is like an all-purpose food sake.
It is like a versatile food sake.
I will drink it after about two more days.
I am looking forward to new changes.
