It's been a long time since I've had a Sentori assemblage. Oh yes, this acidity. I wanted to try drinking Akamo too. At first I was surprised by the acidity, which I hadn't had in a while, but I soon got used to it. The second day, the sake became milder and easier to drink. It also has a nice sharpness, so I guess it can be drunk with food.

I have only a vague knowledge of brewing forests that I have seen before. I asked the owner about the sweet taste and he recommended it. It is very fruity, with a full aroma and a clear sweetness. I opened it without any prior information and was somewhat blown away (sweat). It has a fizziness that I like, but I don't think it is suitable as a food wine, so it is for enjoying the sake by itself.

Beetle first time drinking. The top aroma is modest, but it has a refreshing sweet aroma. In the mouth, it has a refreshing acidity and sweetness like diluted lemonade (which sounds bad when you say it like that, but it is), with a slight umami taste of rice. It is refreshing and you can drink it in large gulps. I think it's more like a lemon sour made from the thin syrup after the ice has melted, rather than lemonade or lemon squash. I'm sorry I can't give you a good analogy.

I was excited to buy this as a birthday treat for myself! The elegant sweetness that is typical of Aizan combined with the Sharaku-like aftertaste was very satisfying! Sharaku is a must have for anniversaries 😃.

This Nanada is my first low-polished sake. I tasted it without any expectations and was surprised by the fruity aroma like ripe bananas and the full-bodied sweetness, richness, and umami of the rice. I was so surprised by the full sweetness, richness and flavor of the rice that I immediately bought it 🍶 I was thinking that if you can make such a delicious sake at 75%, there is no need to polish it too much 😅. I think if you can make such a delicious sake at 75%, you don't need to polish it too much 😅.

This is my first time to drink Tenmei's Momoten. Recently, I have been consciously trying to buy nigori sake, but many of them have a strong bitter aftertaste, which I found a little bitter. It may be a good accent for those who don't like the sweetness of nigori sake or those who like dry sake, but.., The first day I opened this Momoten, I felt a bitterness in the aftertaste and thought "I missed it again..." But when I drank it two days later, the bitterness disappeared and it was transformed into a slightly sweet and sour and refreshing sake 🍶. This is indeed delicious 🍑.

⭐︎ Invited by a friend, I brought a bottle of Oshinshu Junmai Ginjo purchased at Suzuki Mikawaya in Akasaka. This sake is full-bodied and well balanced. The aroma is slight, but as it rolls around in the mouth, the acidity and umami blend together. It does not have the gaseous feeling that is typical of Taishinshu, but it is like an all-purpose food sake. It is like a versatile food sake. I will drink it after about two more days. I am looking forward to new changes. After an hour, the sweetness has increased and it tastes even better 😎.

Amami's fourth bottle, the first batter is Akaban Oumachi. Opened the bottle to decide whether to buy the second and later. What a wonderful aroma! This is the muscat aroma (is this different from 4mmp?). The aroma is very nice. The gasiness is also very strong. Gentle sweetness typical of Amami and a stronger acidity than usual. Delicious! The second half has a strong umami taste. Almost no bitterness. Finishes with a hint of sweetness. Very tasty. It was expensive, but well worth the price. I will buy the next Senbon-Nishiki!

The aroma of Jikin is strong. The moment you put it in your mouth, it's Jikin! However, the usual sizzling and juiciness is subdued, and the bitterness and burning sensation of alcohol is bothersome. Hakutsuru-nishiki was gorgeous even in jun-dai, but this is quite different. I have a feeling. It's good, though.

There's a long line of other drinks that I need to drink, but after reading your review, I prioritized Momoten and opened a bottle. The first sip surprised me with a momentary peach🍑 nuance. After that, it had a mild rice aroma and a refreshing fruitiness. Is it melon botanicals? No, I think I'll go with peach🍑 here! There is also a strong sense of gas. The sweetness is very gentle and wonderful. Tenbi is always gentle. A refreshing sourness follows, increasing the refreshing feeling. The sweetness and sourness continue gently until the end, and then slowly and gently it kicks in. This is delicious. I'm going to have to buy another one!

The Collage of Collage is a good place to start. This is my third one. The aroma is still melon. In addition, there are citrus nuances this time. You can also feel the gas. When it is cold, the acidity comes first. As it approaches room temperature, the sweetness increases. The aftertaste is moderately bitter. Exquisite. At the end, you can feel the sweetness in the finish. The first, second, and third are all satisfyingly delicious. Each one has a slightly different character, so it's fun to drink.
