Tenbi Junmai Ginjo Nama Genshu This sake brewery was established about 2 years ago. Even though the brewery is young, the taste is first class. It has the aroma and flavor typical of sake from Yamaguchi Prefecture, and when it is first opened, it is full of freshness and has a good burst of flavor. It is delicious. Houraisen Hanano no 賦 This sake is said to be brewed with the same specs as Sora. This is the second bottle after Hatsu Natsu no Kaze. It seems that the aging period is a little shorter. It's also expensive, but it has a high quality feel. The aroma is gorgeous and sweet and sour like a lychee. The sharpness is good, so it can be drunk quickly. I think it is best to drink it cold. It's delicious!

Kaze no Mori Raft Gathering (I couldn't convert this into kanji) As it is 80% polished, it has a good rice flavor. The sense of carbonation and moderate acidity peculiar to Kaze no Mori. The sourness is more pronounced than the sweetness. I think it is better to drink it with something than to drink it alone. Anyway, it is good.

Takashi Fukamari Here comes a sake from Kimi's sake, the one for warming up. It's truly in season. I tried it cold this time, but it lacked the impact of the flavor, and it was refreshing to drink. I think it would be better to leave it a little longer before drinking it. I'm looking forward to seeing how it turns out when it's warmed up.

Penglai Spring - Winds of Summer This is one of those sakes that came out in May but was sitting in the fridge. It's the same specs as Sora, but I heard it was aged for 3 months in its original form. It was my first time to try it, but it's not just a sweet fresh sake. It's not just a sweet fresh sake, it's a high-class sake with a high scent and a mild sweetness. It's good, so be careful not to drink too much.

The second one I bought but it was sitting in the fridge. Wind Forest ComeAgain Gentle fruitiness. It's like a pear. The light carbonation peculiar to Kaze no Mori goes together and it is good. It is more like a sparkling wine than a Japanese sake. I want to drink it well chilled.
