ヰリアム3.75/5 Strong and dry, yet pretty smooth. Raw almond, cantaloupe, whiskey, bitter honey. Really strong, packs quite an alcoholy punch, yet it manages to have a smooth texture and some light pleasant flavours. There’s a gentle hint of sweetness initially but it goes very dry very fast. Very clean taste. For me I think this is maybe a little too dry but it’s interesting to try a well made +10. I will try pairing with some food and see how that is.

ヰリアム4.25/5 Simple and clean, smooth and tasty. Yellow apple, honeydew melon, candied almond, coconut milk, white chocolate, stone. Little hint of acidity, medium-low sweetness. Clean background bitterness, well restrained but adds some interesting maturity. A whisper of creaminess near the finish. This one is subtler than some, but quite enjoyable and well balanced.

ヰリアム4+/5 Big flavourful JDG, strong, bold, fruity, and sweet. Blueberry, banana, papaya, ginger, sugarcane, juniper. Love the light fruit flavours. Low acidity, medium sweetness, a bit of light bitterness. There’s a strength to it that doesn’t quite feel like bitterness, it’s more of an alcoholy burn. Can’t quite call it “smooth” but it is very clean. Just gives you a little slap in the face. Maybe it’ll smooth out a bit as it breathes. Very interesting!

ヰリアム4.25+/5 Wow, pretty impressed with this, clean and smooth with some wonderful gentle woody notes. Asian pear, cantaloupe, raw sugar, juniper, forest leaves, pine. First time trying a taruzake, didn’t know what to expect, thought it might be pretty strong. Instead it’s clean and slightly fruity, there’s a light bitterness that creeps up but never gets too strong and a smooth finish. Pinch of sweetness. The woody notes from the cedar add a delicate perfume to the background. Really interesting!

ヰリアム4.25+/5 Another great California saké, crisp and light and smooth and refreshing. Honeydew melon, yellow apple, almond, coconut cream, burnt sugar. Real light body, one of the lightest sakés I’ve had. Clean crisp flavours that feel bright despite the low acidity. A little bit of alcohol flavour but very light. It’s very refreshing with a light and smooth background creaminess. Made using water from California’s Sierra Mountains, another great brew from Sho Chiku Bai USA!

ヰリアム4/5 Fairly sweet with some light fruity flavours and a powerful finish. Blueberry, lychee, papaya, butterscotch, sweet basil, juniper, stone, graphite. It’s pretty interesting, fairly complex flavours, nice fruitiness, but there’s some flavours in there that aren’t my favourite. It gets pretty strong towards the end, with a bitter graphity aftertaste. If this were more bright and delicate I would love it, but instead it’s quite strong and alcoholy. Still, overall enjoyable!

ヰリアム4+/5 Light, clean, and pretty smooth. Walnut, butterscotch, milk, salt, dried leaves. It’s very dry, just a hint of sweetness but I think it’s just a trick from the caramelly flavour. It’s pretty smooth but there’s a bit of bitterness which gets a little strong towards the end before backing off. Almost no acidity, a light creaminess. At first it has a little sharpness, but after breathing a bit it’s much smoother and pretty nice, though I think a little more sweetness would improve.
Yumetsukiyo (Dreamy Moon)純米大吟醸純米大吟醸

ヰリアム4.5+/5 Smooth and delicious and pleasantly sweet. White chocolate, cream, honey, honeydew melon, chamomile, stone. More like “Creamy Moon”! Nice confident sweetness, but doesn’t feel at all cloying. Really smooth and creamy. Almost no acidity. There’s some earthy background bitterness that’s balanced out well by the sweetness, don’t feel too strong, yet there’s a gentle power to it. Pleasant dry finish. Really enjoyable, one of the best sakés I’ve had so far!

Sho Chiku Bai「Crème de Sake」にごり酒純米にごり酒

ヰリアム4.25+/5 Delicious nigori. Cantaloupe, cream, honey, marshmallow, coconut meat, raw almond. Big cantaloupe flavour, nice rich smooth creaminess, interesting savoury background notes. Fairly sweet but not at all cloying with plenty of complexity and bitterness to make it feel mature. Overall smooth, creamy, and tasty! Another great saké brewed in California!
Hakutsuru淡麗純米純米

ヰリアム4.25+/5 Wow! Surprisingly really nice! Really enjoyable flavour! Marshmallow, corn, caramel, pear, blueberry, stone. Slightly sweet, big marshmallow flavour, but not at all cloying. Overall pretty dry, but very well balanced. A robust bitter note but it’s balanced nicely with everything else. Fairly smooth. So flavourful! Really wasn’t expecting much at all from this but it’s delicious! Very pleasant surprise.
Chiyomusubi「おやじ極楽」純吟純米吟醸

ヰリアム3.5+ Sweet and strong. Honey, amaretto, light ginger, anise, graphite. Strong, burns on the tongue like ginger. But it’s sweet and syrupy too, almost liquoricy, or maybe just the label is black… it’s strong yet pleasant, like wasabi. Another crazy little guy. This time it’s actually a little creepy. The stronger the saké the creepier the mascot. Like the saké, he makes me a little uncomfortable, but I kinda like it…
つきたてThis is a character from a Japanese haunted anime called Gegege no Kitaro. This character is called "Me-tama no Oyaji" (father of eyeballs).

Chiyomusubi「鬼太郎」純吟純米吟醸

ヰリアム3.5+/5 Sweet and syrupy and simple. Honey, marzipan, stone. Pretty sweet and not much else. A little light nutty flavour, some light earthy bitterness. Not a lot going on but it’s not unpleasant. It’s pretty smooth though. Another fun little crazy guy. A little creepy actually. But perfect for the season.
Chiyomusubi「ねずみ男」純吟純米吟醸

ヰリアム3.5+/5 Sweet and simple, but enjoyable. Big honey, light honeydew melon, cashew, stone. Not very complex, but what’s there is pretty enjoyable. Mostly honey with a thick bitter note which is fairly well balanced out by the sweetness but there’s still a mild alcoholy burn. Love the little drawing though.

Dewanoyuki「瓶囲い」純米大吟醸純米大吟醸

ヰリアム3.75+/5 Interesting and tasty, my first daiginjo. Cantaloupe, burnt sugar, almond, coconut, stone, fall leaves. Simple flavours but interesting background notes, there’s a bitterness which builds and you think it’ll get too sharp and then it backs off for a smooth finish. Medium-light sweetness, almost no acidity. Interesting earthiness. Not bad at all but was expecting a little more complexity from this, it’s fairly simple.
Jozen Mizu no Gotoshi「Aqua」純米純米

ヰリアム4/5 Very nice, smooth yet strong and very clean. Papaya, honeydew melon, marshmallow, cream, almond paste. Nice smooth creamy flavours with delicate fruits. It’s lightly sweet, but dry by the finish, almost no acidity, not butter but fairly strong with a bit of an alcoholy burn near the end. Clean finish. Liking a lot of this, would prefer that strong alcohol flavour to be smoothed out a bit more. Overnight it became much smoother, so enjoying it more now!
Takenotuyu「雪ほのか」純米初しぼり純米無濾過

ヰリアム3.75+/5 Very interesting, clean and savoury with a creamy finish. Swiss cheese, cantaloupe, bubblegum, burnt sugar, cream. It’s quite strong, with a robust bitterness that doesn’t get too strong luckily. Very clean flavour but interestingly mixed with savoury notes. Rich and full-bodied. It’s got a slight bit of sweetness initially but goes dry by the finish. Very interesting, pretty enjoyable, but a tad bit strong.

ヰリアム4/5 Strong, flavourful, clean. Papaya, orange blossom, chestnut, almond, caramel, salt, graphite. Pretty dry yet there’s a confident little sprinkle of sweetness in there that has some fun and then disappears by the smooth and savoury finish. It’s pretty strong, gives a bit of an initial smack and there’s some quite noticeable bitter notes. But it’s pretty well balanced and it adds to the excitement. Still, it feels quite elegant and mature. It takes you on a fun and interesting journey.

ヰリアム3.5+/5 Good flavourful sake, very smooth and surprisingly sweet. Yellow apple, honey, golden raisin, cherry blossom, marzipan, stone. Pretty flavourful, clean, crisp, and smooth. Very little bitterness, with a pinch of savouriness. Low acidity. Probably the sweetest non-nigori sake I’ve had, almost a little too sweet, or it could use a bit more acidity or something.
Hakutsuru「Chika Sake Cup」純米

ヰリアム3.5+/5 Very clean and crisp, there’s a hint of acidity but it doesn’t go too far, light pinch of sweetness, with a bit of a savoury finish. Somewhat floral. Burnt sugar, sweet corn, marzipan, jasmine, chamomile, wet concrete. Really like the delicate floral flavours and the clean fresh feel, but it gets a little strongly bitter towards the end in a way that I don’t prefer unfortunately. But overall it’s not bad and fairly enjoyable.

It’s a little bit strong towards the end, not exactly too bitter, but kind of a vodkaesque burn that isn’t my favourite. Still, it’s overall enjoyable.
