Pale yellow in color. The aroma is beautiful, like ripe pineapple. When you drink it, the mouthfeel soaks in easily, and the acidity and bitterness are moderate, so it does not seem too much like Yamahai. It is a sake that allows you to enjoy its beautiful, mellow, fruit-like sweetness. I preferred it served cold or chilled rather than heated. ⭐️⭐️⭐️⭐️ Purchased at Yamatoya Shuho. I opened a bottle because I had a celebration and no champagne or other good sake. It had been stored at 0 degrees for 2.5 years in my cellar at home, for reference. I thought Jungin and Shiboritate would be easier to understand as the charm of Kinjaku, but I had the impression that I did not come across Jungin very often before it was talked about on SNS. Daiginjo and Hisho are sometimes sold at regular prices outside of liquor stores. In my area, Tobi-Roki is Jun-Dai>>Kuro-label Jun-Gin>>(wall of restaurants and storefront sales)>>Toku-Jun, and there is too much difference in difficulty of availability among brands for the end-user individual consumer 😪.
