2025 Junmai Ginjo Chabochabako This bottle is brewed on an annual trial basis at the Hiroshima Prefectural Food Industrial Technology Center. It is characterized by a sweet aroma similar to banana and a juicy, rich taste. The standing aroma is more banana-like. However, the acidity was so strong that it won out and the juicy, rich flavor was not to my liking. I drank several bottles of each of the sakes made with Moeibuki, the original rice, and Hiroshima LeG-Sou, the yeast, because they are local. Some of them, such as Kamoizumi and Dai-Go-Do, were tasty, but I got the impression that they were a little too much for my taste. ⭐️ Last year's Akitama was really beautiful and one of my 3 favorites of the year, and I was looking forward to this year's as well, but it didn't match this year. I thought I would have to choose the C Junmai with Shin Gin in terms of catalog specs, but it was sold out early.
