I found this Kokushi Muso by chance! Although the mouthfeel makes you feel the sake, it passes through the throat smoothly, whether the water is good or the rice is good. It was a perfect bottle for fried chicken.

This is a well-balanced bottle that will keep you entertained until the very end, from the fizzing sound when you open the bottle, to the slight foaming sensation in the mouth, to the standing scent and aroma. This is a bottle from Kinnoui Sake Brewery, famous for "Wataya". It goes down easy and lets you fully enjoy the flavor of the rice. It's not a fluke that it's brewed with famous water! Sashimi with flatfish is the best snack!

It's reminiscent of Eikichi Onizuka, with a sweetness at the beginning and a dry mouthfeel that comes with a bang. Since it's a Ryusei, I would have liked to have drawn Tatsuji Danma as an Onibaku anyway, but cheers to the spirit of Mr. Tooru Fujisawa!

The last time I posted this was a nama-shu, but this time it's a hi-ire ver. It has a light lingering aftertaste that makes you think it's refreshing. It will go well with any kind of food, but first, homemade salmon on salted kelp!

The first sake in 2021. It is indeed delicious when it is polished to 30.9 percent. There are some good sakes without centrifuging or polishing, but this is one of the sakes that made me realize the greatness of Ottersai.
