I compared No. 6 and No. 7 that I bought and laid down in the winter. The specs are the same except for the yeast. To be honest, I can hardly tell the difference, but the No. 6 has a sourness that comes first and is covered by a mild sweetness, while the No. 7 has a good balance of sourness and fruitiness, and a good sharpness. Personally, I prefer No. 7.

Purchased after receiving a recommendation from a store of the Nihon Meimon Sake Kai (Japan Famous Sake Association). Mild aroma of muscat and green apple. The perfect balance of acidity, bitterness, and rice flavor, with a refreshing and brilliant sharpness. I hope sushi restaurants nationwide will carry this special junmai, which exceeds expectations!

It was distributed by a liquor store in Oimachi. I let it sit in the cellar for a bit, but as soon as I opened it, I could see the gentle bubbles. It has a very good balance of fresh and fruity aroma, mild acidity, slight bitterness, and sweetness, with good sharpness. I like it.
