Yuki
This is a tasteful brewery in Shirakawa, Fukushima Prefecture, which we learned about through "Gakki Masamune".
Unfortunately, there was no "Gakki Masamune" when I visited the brewery last year during a torrential downpour, but I got a bottle of "Shizenogo BIO" instead, which was so delicious that I bought another spec this year.
This sake is made with Fukushima yeast, sake rice, and no pesticides. It has a perfect balance of sweet, spicy, and umami aroma, and even though it is unfiltered and unpasteurized, it is refreshing and clear from beginning to end, but not too light. It is a "beautiful" junmai ginjo that goes well with any meal. Repeat confirmed: ❣️
