It has a moderate umami and slight bitterness on the palate, with a dry finish that cuts through quickly. Well-balanced, easy to match with anything, and good value for money! This is a must-try for all Shinbashi oyaji and non-oyaji alike!

Hot sake on a hot day (3) At a cool music bar with a DJ booth, we were served a selection of sake selected by the owner, who knows sake inside and out. This was also a brand new to me. It has the color, taste, and aroma of heated sake, with a strong lactic acid aroma and taste, followed by the umami sweetness of Yamadanishiki. We enjoyed it with miso-flavored and smoked dishes.

It was the first brand, a rare sake rescued from the Noto earthquake. It has the thickness of Noto's sake, but without the quirks, and has a clean, refreshing finish typical of honjozo sake. I enjoyed it hot or warm, but I would like to try it cold as well. I found a good sake. ☺️

An unfiltered, unfiltered, uncooked sake on the lees that I received from a hanpukai at a liquor store in Oimachi. As noted on the label, the cork skipped with a swoosh, but the inside did not overflow. As expected, it was refreshing, with a mild Aizan sweetness and a clean aftertaste. A dangerous adult calpis sour to drink up fast 🫗.

I stumbled upon Tasake at a restaurant in Shinbashi. It has a modest aroma and a delicious flavor that comes through in the mouth. I love this special junmai, which is always wonderful no matter how many times I drink it.

Sumptuousness. Gentle aroma of muscat, green apple, and rummy. Nice equilateral triangle of mild acidity, sweetness and bitterness, with a soooo clean aftertaste. Tanabata sake that makes you feel very gentle when drinking it: ⭐️🎋 I will drink it slowly until tomorrow♪ This year's Koshi is delicious no matter what you drink.

It was recommended to me at a restaurant in Akasaka. It is a slightly sparkling low-alcohol draft made with white malted rice. The refreshing acidity and slight sweetness do not leave any residue on the tongue, and it is very refreshing and easy to drink. The first drink of the summer.

I compared No. 6 and No. 7 that I bought and laid down in the winter. The specs are the same except for the yeast. To be honest, I can hardly tell the difference, but the No. 6 has a sourness that comes first and is covered by a mild sweetness, while the No. 7 has a good balance of sourness and fruitiness, and a good sharpness. Personally, I prefer No. 7.

Purchased after receiving a recommendation from a store of the Nihon Meimon Sake Kai (Japan Famous Sake Association). Mild aroma of muscat and green apple. The perfect balance of acidity, bitterness, and rice flavor, with a refreshing and brilliant sharpness. I hope sushi restaurants nationwide will carry this special junmai, which exceeds expectations!
