This Kyoto sake is made with Koshihikari rice and black malted rice.
Black koji is said to contain citric acid, but the acidity is not strong, and the sweetness of the Koshihikari rice is maximized by the black koji in this superb bottle.
Personally, it is the most shocking sake of 2022 and one of the top tasting.
