KAISUMORI Daiginjo At the KAISUMORI Bar in Tokamachi City, Niigata Prefecture. I had seen junmai daiginjo and junmai ginjo before, but we were served daiginjo at a French dinner. The Daiginjos are not typical of Kakusumori and are more of a light, umami-guchi type to be drunk with a meal. It was smooth and tasty, but I personally prefer junmai ginjo and junmai daiginjo because of their sweetness. However, I drank too much of it because the sake was so good that I couldn't remember what it was... (laughs).
