This is Shinsei Viridian's Ikkasan Mokkoke Junmai. I felt that the unaged Viridian was a sake with a pronounced sweetness, so I tried to see how it would change with aging. I tasted it with Mr.CHEESECAKE Valentine's Day Limited Edition for the purpose of contrast and matching, thinking that Viridian would have its own sweetness. The cheesecake had a houjicha and hazelnut flavor, so it went well with the sake, but the sweetness of the sake disappeared. However, I could feel the complex flavor other than the sweetness because of that. The aftertaste was clean, so it complemented the goodness of the cheesecake without erasing it. After resetting my palate with a chaser, I drank the drink, and it was an intense drink that had the sweetness of viridian mixed with the deliciousness I felt earlier, but was also refreshing.

If you want to drink it with sashimi, this is the one! It was recommended to me. When I drank it cold, I got the impression that it had a refreshing taste without any aftertaste. Even when I ate it with horse mackerel sashimi, it cleared up the raw smell. When served warm, the sake takes on a super-spicy presence. However, the clean aftertaste is still there, so I was able to enjoy it with unni. I felt it was a high level sake for sashimi and sushi.
