Autumn has arrived. The hiyaoroshi season has finally arrived. Today we have Akabu Junmai Hiyaoroshi. As soon as you put it in your mouth, you feel a full-bodied sweetness, but when you swallow it, the spiciness and bitterness remain in your mouth. It was like that. Would you call it sharp? If you don't like the bitter aftertaste, drinking it lukewarm will mellow it a bit. It is inexpensive and recommended.

A fizzy, shrieking sensation. When poured into a glass, it bubbles like cider. It has a sweetness of -20% sake. The combination of moderate acidity and sweetness makes it a juice. It is an ordinary sake with an alcohol content of 15.5, but in a sense, it is a dangerous sake that can be drunk without hesitation. It is similar to Kumamoto's Sansho. This sake is another gem that I first encountered at Sake Resort Central in Wakayama (an all-you-can-drink by the hour restaurant). I got it on the Internet. Hoshizumi is really good sake.

Sake Mirai is a sake rice developed by Takagi Sake Brewery, which has inherited the manufacturing techniques from the Jyushiyo Takagi Brewery. This is already Jyushidai itself, isn't it? It has a melon aroma, and it is a high-grade Yubari melon. It is the most delicious. I want to compare it with the original Jyushiro!

The feeling of fruit when you take a sip. I can't get enough of it. Autumn version of Turtle Sea. It is delicious. Why is the rice polishing ratio of 59% so low? I think about it and feel sad that this delicious sake is running out. (It is only natural that it will disappear if we drink it.) It was a gem that made me want to try various sake from Nagano Prefecture in the future.

The second bottle of Masamune Instrument was a Junjozo. The previous bottle was the standard Honjozo Nakatori, which was also good, but this one was also delicious. The mellow, sweet aroma enticed me to drink more and more. The alcohol content is low at 13%, so it is easy to drink. You can never go wrong with musical instruments, no matter what you drink.

This is my first Kudokutei. Junmai Ginjo with a slightly high alcohol content of 16-17%. Polishing ratio 50%. It is crisp and dry. Because of the high alcohol content, it is not easy to drink. It has a strong mouthfeel. I had an image of a light and dry sake. I am looking forward to the future because this kind of sake often changes in taste after opening the bottle.

This sake was given to me at work as a parting gift for a job transfer. It is one of the most expensive Kido sake. Slightly dry. Slightly dry, with a firm finish. A 35% polished rice daiginjo. The brewer is said to be involved from the rice growing stage, and I could feel his enthusiasm in this bottle. Thanks everyone for the delicious sake!

Golden Chun-Chun, which is rarely available. And it's a Daiginjo. Golden label. I bought it for the Bon Festival. It is a perfect combination of the refreshing feeling of a daiginjo plus the sweetness and umami of the rice. The sweet aroma like mango is irresistible. Personally, I think it is a delicious sake comparable to Jyushiyo.

A summer version of Kangiku. Pineapple in both aroma and throat! It was a tropical sake. Delicious, delicious! This sake brewery is located on the Pacific Ocean side of Chiba Prefecture, and I wonder if they have good water. There are many kinds of Kangiku, but all of them are delicious.

I went to the next prefecture to play golf and found it at a liquor store on my way home. (about 3,000 yen). It was my first encounter with it. The aroma, taste, and aftertaste are fruity and sweet. This taste is indeed something you can't find very often, even though it is cheap. I think it's a good thing that it's so inexpensive. I would definitely buy this sake again when I visit the neighboring prefecture.

Hanamup was produced under the technical guidance of the Jyushiyo Takagi Sake Brewery. It definitely inherits the mouthfeel, umami, and fruitiness of Jyushiyo. It is very easy to drink, and is a dangerous sake that can be drunk as much as you want. I would love to compare this sake with the original Jyushiro, but my financial resources and research have not allowed me to acquire the original. It is really good. My favorite!

Today is Otters 23. Otters are the spark that started the current sake boom. It used to be hard to find, but nowadays I'm happy to be able to buy it anywhere. But as a cost-conscious person, I think it is a little too expensive. Especially this Jiwari Sanbu, which costs more than 5,000 yen for a 4-ounce bottle. I can't buy it myself. (This one was also given to me by someone! Thank you.) But it is still delicious. I can drink as much as I want. LOL!

Kido's luxury brand Muryozan. It was given to me as a gift for my new job. Yamada-Nishiki rice is polished to 40%. It has a wonderful sweetness and sharpness unique to Kido. Every time you drink it, you will frown at the deliciousness. It is such a sake. Kido is a cosy sake, but this sake is quite expensive. However, when the deliciousness is taken into consideration, I think it is a cosy sake.

Akabu's finest product. Sweet aroma and sharp taste. Melon? Mango? What is this flavor? When you roll it on your tongue, the aroma escapes your nose and you are already having a supreme time. The No. 4 bottle costs 5,500 yen. It is very expensive, but it is more than worth it.

I got 10 after bud 09. I thought it was a little more robust than 09. I thought it had less sweetness and more sharpness. My wife preferred 09, but I preferred 10. Fruity and aromatic. Shizuoka Prefecture also has some good sake.

Flower dance continued from yesterday. Today is Bud 09. My first impression was that the taste was very similar to yesterday's Abusse. However, both fruitiness and acidity seem a bit milder. It has a hint of sweetness and is easy to drink smoothly, but it has a high alcohol content of 17%, which is dangerous if you drink it in a good mood. LOL! The label on the back says that the rice is grown with fertilizer made from molten slag generated from garbage incinerators. Molten slag in something you put in your mouth....... SDGS, huh?

I received this again from a business partner. The bottle is hung with a sign that says "Fruity Sake with Wine Yeast" on it. The aroma is sweet and citrusy. Slightly sweet. More than that, it has a moderate acidity that spreads in the mouth. With an alcohol content of 12 degrees, you can drink as much as you want. This is the first sake from Shizuoka Prefecture. Maybe I like this one better than Isojiman, which is also from Shizuoka Prefecture?
