Memorandum. The nama-shu was very tasty, but the hi-ire sake is not inferior at all. It is sweet and tasty with a gorgeous acidity. I was happy to compare it with Kangiku Seikai. Both are expressed as "sweet, umami, and acidic," but I was impressed by how different they were. Shinshu Kamerei has the better balance of taste!
