I traveled to Wakasa. I wanted to match local rice with local sake, so I tasted Hayaseura, which was recommended to me in Tsuruga, and a small bottle of special junmai, which I could buy, with local seafood and the sunset over the Mikata Goko (five lakes). (The inn brought the sake to our dinner place 👌👌.) The sake was not too rich, even for a Fukui sake, but had a strong flavor that complemented the Japanese food, and I felt it had a special junmai aroma. It is a thoughtful sake that can be used as a mealtime sake and also enhances dishes with a little distinctive flavor, such as simmered dishes. 😊

I haven't been able to drink it recently, but it is my favorite brand of Hayaseura.
