Junmai-shu I bought as a souvenir from Fukui. I bought heshiko and dried firefly squid and thought it would be a good idea to buy a dry Junmai-shu for this flavor! I bought it. As expected, it was dry with a lot of gusto! It tastes great cold, but it also tastes even better when heated up, as if it were a sake that can be heated up. It was the perfect local sake to go with Fukui's snacks!

Shozui, a daiginjo representing Hatsuson, from Sakata City, Yamagata Prefecture. This sake brewery is dedicated to the production of sake using the "Namahashi-zukuri" method of sake brewing. The taste is fruity and mellow, with a deep umami flavor, but the aftertaste is good, leaving a dry taste typical of sake from the port town of Sakata! Is this deep umami a taste that comes from the sake brewing process? It is so good that you can have many glasses of sake alone, chilled. ☺️

This sake was drunk during sightseeing in Awara Onsen. I was grateful for the rare limited edition of 50 bottles that were available only in summer. It was a pleasant sake with a dry, crisp, Fukui-style flavor, and when served chilled with seafood, it brought out the flavor of the sea.

Junmai Daiginjo of Hakuro Tarusyu, a representative of Take-no-Dew. It has a fruity, rich taste with a good umami that comes through quickly! And yet, the clear, transparent taste is characteristic of Yamagata sake. It was a good sake to chill and enjoy the flavor and aroma!

This sake was drunk during a trip to Awara Onsen. It seems to be a sake that is only available in summer. It was dry with a refreshing sharpness typical of summer sake, but had a mellowness typical of sweet sake, which was quite unusual. It tasted even better with sashimi.
