Purchased with the golden label. The aroma is gently sweet. The fizz is strong, and there is a strong stimulation in the mouth. There is a gentle sweetness, but no sourness, and the bitterness comes later. A strange sensation that quickly disappears from the mouth. I have been looking forward to this drink very much since last year! The aroma is fruity and sweet. There is a light effervescence and a very good balance between sweetness and bitterness, although they are strong. The acidity is moderate and there is no pungent aftertaste. I think it is quite similar to Huang Shui Xian. The level is very high, but if the bitterness were a little weaker, it would be my personal don't-miss taste.

Opened one I bought 6 months ago! The bottle is luxurious and super cool 😎. The smell is subdued. Slightly grape-like aroma. Slightly effervescent, with a slight sweetness, strong acidity, and a bitter aftertaste. The acidity is quite strong in the Niimasa series. It is easy to drink and has no pungency, so it is a versatile sake that can be drunk as it is or paired with other sake.

I tasted this sake when I attended an aging seminar at Imanaya. -The sake, stored at 5 degrees Celsius, was 22 years old, but still had a freshness to it, and yet it was a delicious sake with a strong accumulation of flavor!
