From a valuable sake that was sold in the past at a liquor store in Kanazawa in the 300ml size, from what came out from under the rubble of the Sakurada Sake Brewery at the tip of the Noto Peninsula, which was completely destroyed in the earthquake.

Iwami Ginzan Special Junmai Shiboritate Unpasteurized Sake Sake rice (Hachiranryu)  (Ota City, Shimane Prefecture/Ichinomiya Sake Brewery) Iwami Ginzan's modified Hachitanryu, a rare sake rice, is distributed in limited quantities. The fresh taste and refreshing acidity unique to freshly pressed sake are pleasant.

Kamidate Junmai Ginjo Sake Rice🌾Sakanishiki (Ounamachi, Shimane Prefecture/Ikezuki Sake Brewery) Original sake from Nishiya, a sake shop next to Izumo Dome.  The aroma is fruity, refreshing, and sweet at the same time, which is typical of junmai ginjo 🍶.

Gyakutei Ikezuki Super Dry Junmai 2024BY  Shiboritate-Arabashiri  Izumo Toji: Seiichi Sueda (Shimane Prefecture, Upan-cho/Ikegetsu Sake Brewery)  The label on the back was made for the local sake shop "Sake no Yamao" in Gotsu City, Shimane Prefecture. It has a unique sourness from the wooden tank pressing and a moderately sweet flavor, and is still delicious.

HONOIKEZUKI ASSEMBLAGE Instant Bottle Firing   Izumo Toji: Seiichi Sueda  (Shimane Prefecture, Upan-cho/Ikezuki Sake Brewery) Sake made from a combination of different types of rice: En-no-Mai🌾 from Shimane Prefecture and the herbal Koshihikari from the town of Onan.  It has a good taste of rice and the gorgeous and unique flavor of En no Mai. ☺️
