After attending Imanishi Shuzo's event on 2025/4/12,
I bought a bottle of Yamadanishiki 50, which was not released at last week's brewery opening.
The aroma is mild, and this one has less of a cedar aroma.
The taste is clean and well-balanced, and it goes in the mouth, down the throat, and after drinking, all on its own without any tugging.
It is too easy to drink, and you can drink too much of it.
It tastes so good that you could finish a whole bottle with a glass of sake.

Attended the opening of Imanishi Shuzo's new brewery on 4/6.
Purchased new sake brewed at the new brewery.
The sake is made in wooden vats made of Yoshinosugi cedar in Nara, and the smell of the cedar is said to be transferred to the sake.
The aroma of the sake has a hint of cedar.
Both the aroma and taste are mellow and well balanced.
The alcohol content is 13%, which is similar to Mimuro Cedar DioAbita.
⭐️4.4
Nara no dewy leaf wind x Yamada Nishiki = new variety Nanatsuyu
The aroma is fresh and blue.
After a light sweetness, it finishes with umami and clear acidity.
Compared to Nara's Rohafu, the sweetness and acidity seem to be more refreshing. It is delicious.
⭐️4.4
The aroma is blue and fresh.
When you put it in your mouth, the tingle of the foam stimulates your tongue.
A refreshing sweetness and acidity pass down the throat.
The sweetness and sourness can be felt properly, but it is clean and easy to drink.
⭐️3.5
The aroma is faintly fragrant and mild.
It is a junmai sake, but it is very fresh, plain and simple.
It would be good to drink it as a chaser to refresh your palate.
⭐️3.7
The aroma is fruity and the alcohol smell is stronger than other Kaze no Mori.
Personally, I do not like the strong smell of alcohol.
The overall taste is well-balanced and round.
The aroma of alcohol lingers in the back of the nose after drinking.
I have drunk all the varieties of the S series, and it is interesting to note the distinct differences in taste depending on the rice field, even if the rice is the same and from the same region.
As a fan of Kaze no Mori, I would like to continue to support its efforts while enjoying its delicious taste.
On April 5, a new variety called "Nanatsuyu," a crossbreed of Nara's dewy leaf wind and Yamadanishiki, the king of sake rice, will be released.
The new sake from Kaze no Mori and Mimuro Cedar will also be made with this new variety, so I am very much looking forward to it.
⭐️4.0
Sake made from 100% polished rice and brown rice.
The aroma through the nose is fragrant and beer-like for a moment.
In the mouth, it tastes sour and bitter, and the sourness lingers until the aftertaste.
The taste of the sake reminds one of the bitterness of beer as it passes down the throat.
It has its own quirks, but I have the impression that the unique taste and characteristics that cannot be tasted in other sake are skillfully and deliciously combined.
It is a different line from the sake we usually drink, but it is a fine sake, and I feel it has new possibilities.
⭐️4.0
The aroma is clean and lactic acidic.
As the name "innocent" suggests, it leaves a fresh and gentle acidity in the aftertaste.
Simple and clean sake.
⭐️3.9
I happened to stop by Imanishi Sake Brewery, where I was recommended to buy this limited edition sake, which was out of stock but they had restocked a few bottles.
It is easy to drink with a low alcohol content and a slight sparkle.
The sweetness is moderate, and the umami from the lees is well pronounced.
⭐️4.0
The aroma was described as young banana-like, and it is indeed like that.
The taste is mildly sour and gently resets the palate.
The sourness is more distinctive than that of RED in the same series.
I have the impression that many sake breweries in Nara and Yoshino have strong acidity characteristics.
⭐️4.7
The aroma is fresh grape and rummy.
Although it is 80% polished, it is fresh, with a robust flavor that comes later.
The sweetness is moderate and it is easy to drink.
This year seems to be a particularly good year, and the liquor store said they have fewer bottles in stock than expected, so if you see one, you should definitely try it.
Kaze no Mori's 807 series are all interesting and impactful.
⭐️4.6
Local brand of Kaze no Mori's Aburacho Brewery.
The aroma is sweet.
The color is honey-colored and has a smooth texture.
The taste is sweet, rich, and delicious.
Contrary to the appearance on the label, it is sweet and gentle.
It is not sweet and sour, but sweet sake.
⭐️4.2
The aroma is gorgeous and white peach-like.
Despite its appearance, the sweetness is moderate.
Sourness at the end of drinking.
Before drinking it, I thought it was a sweet type, but it was clear and the acidity and umami left a lasting impression.
I have been looking forward to its release since last year, so I am glad to finally be able to drink it.
⭐️4.5
The aroma is cool and refreshing, and it quickly passes through the nose.
The moment it enters the mouth, the carbonation stimulates the tongue.
The middle is clear, and as you hold it in your mouth, the back of your throat gradually becomes hot like a dry sake.
The lingering aftertaste is umami and complex.
It is the most gaseous and characteristic of the S-Kaze no Mori that we have had so far.
Personally, I prefer it to any other S-Kaze no Mori.
⭐️3.9
The aroma is gentle and mild.
The taste is complex, with a gentle sweetness immediately after the first sip, and a lingering bitterness.
The overall taste is not too assertive, and the name "Ameyadori" fits perfectly.
⭐️4.2
This brand was featured in the magazine dancyu.
The label looks cool, like a local beer.
The aroma is refreshing and cool.
The first sakes are clear, then a little sweetness and richness.
It is a beautiful, round sake.
There is also a "Blue" brand made with "Gin-no-sato" (a type of sake produced in Yoshino, Nara Park), which I would like to try as well.
