It is said to be a sake made with wild yeast 505 from Hirosaki University. I thought it would taste rough because of the wild yeast, but it was mild and umami.
I would like to try it again.
It is a new sake, so I drank it in a hurry. It had a slight sourness, but I didn't really feel the fizziness. But it was really good and I finished it in one night.
First crop. I feel it was a shame that I had never had it before. It is a hiyaoroshi, so it has a mellow flavor and is really delicious. I wanted to pair it with sashimi, but there wasn't any, so I had it with cheese and stewed fish.
