This is a test brew by Tenryohaii Sake Brewery, version 2025. It is beautifully effervescent and has a strong umami flavor, with a moderate sweetness or fruity flavor. It also has a bit of bitterness, which I personally like perfectly! It is light at 13.5 degrees and has a strong flavor, so it is not easy to drink, but you can drink it with gusto. It is a limited edition of 1,000 bottles, and I am very happy to have it!

Itzumi Shuzo is the smallest brewery on Sado Island. This brewery is famous for Itsuki, which was introduced by V6's Sakamoto, but Itsuki was sold out, so I bought this one. The color of the sake is a little bit dark, and the taste is very strong at 17%. It has the umami taste and aftertaste typical of Yamahai, and it is delicious, but it is very strong. Be careful not to drink too much. The person who explained the brewery to me was very simple and did not try to sell me anything in a good way. He explained that he was sorry for the lack of sake and that this was the only sake available, which was a very favorable impression. I will support this brewery!

Kanaderu, from Obata Shuzo, the brewer of Manotsuru on Sado Island. Made from 100% Gohyakumangoku. Alcohol 15.5%. A little spicy on the palate, with bitterness and umami coming later. It may taste a little like apples. It seems to be a recent sake. It tastes like what you would expect from a sake brewed using a traditional sake yeast yeast yeast yeast yeast. This is delicious. Limited edition, flat polished rice, unadjusted raw, light nigori active raw GRAPE label SPARK.Uonuma Seishu, rich mellow uncapped. 16 degrees. This is a gem from Kanazawa-ya in Uonuma. Long description of the sake.... It is slightly carbonated and is Calpis juice. It is not that carbonated. Anyway, it is sweet. It feels different from fruity sweetness. It has a strong flavor. I think there is some kind of miscellaneous taste. It may be overdone, but it's delicious anyway! Definitely a Hiragana Takachiyo!
