Kanaderu, from Obata Shuzo, the brewer of Manotsuru on Sado Island. Made from 100% Gohyakumangoku. Alcohol 15.5%. A little spicy on the palate, with bitterness and umami coming later. It may taste a little like apples. It seems to be a recent sake. It tastes like what you would expect from a sake brewed using a traditional sake yeast yeast yeast yeast yeast. This is delicious. I think it is spicier than this type of sake because of the amount of "Gohyakumangoku". It's a good sake.
