Takeyuki was charmed after drinking it in a tavern This is the second bottle I bought and drank. The aroma is floral and gorgeous! It has a strong umami and sweetness that is typical of Aizan. Good balance of sourness and bitterness. The higher the temperature, the stronger the bitterness and sharpness become, so I personally prefer it cold. If you like umakuchi sake, you will probably like it!

Haneya after a long time I have the impression that they are good at expressing umami. This sake is also refreshing yet juicy! The aroma is slightly citrusy. Wadaya's March Hanpukai Sake I was curious about this sake, but never picked it up. It is a low strength sake with a clean, refreshing taste, but it has a structured flavor on top, which is to my liking! The aroma is subdued, with a glassy aroma of lime and green apple on the palate. Slightly sweet, with a full-bodied umami impression, and a beautiful sake quality with almost no cloying flavors. The aftertaste has a slight bitterness and sharpness that makes you want to drink more, This beautiful quality of sake is very attractive, I'll buy other sakes if they sell them next time!

Many of my favorite tasting sakes, Aizan This is my third bottle of Daimine, and I like it a lot! Is the aroma subdued? I'm not sure if it's because of hay fever. Sake quality is clean, with umami on top, and the acidity complements the taste. There is a bitter aftertaste that makes you want to keep drinking.

In terms of rice polishing ratio, this 49% polished rice ginjo-shu could be called a daiginjo. The aroma is subdued but gorgeous, and the nose is filled with the aroma of rice. The taste is gentle, but the umami is very strong. It tastes like chewed rice and has a clean mouthfeel with no lingering aftertaste. I drank it almost at room temperature, but I think this is the best sake. It might shine even when heated.

Bizen Omachi Junmai Daiginjo Shiboritate Unmatured Sake Wadaya's February Hanpukai Sake It's already the end of March. Fruity aroma. A bit drier than the other packaged sake, but the umami is well balanced. Powerful umami from OMACHI, nicely finished with acidity and bitterness to tighten up the flavor. I've only had Kamonishiki's sake, but they are all really beautiful, and you can't go wrong with any of their sake!
