Banshu Aizan Junmai Daiginjo Packaged sake using my favorite sake rice, Aiyama Slightly fizzy The aroma is calm yet gorgeous. All of the sake brands have a lot of umami, but this one seems to have a particularly strong umami. I think it is about the same as Bizen Omachi. The taste is really delicious, with a balance of mellow umami, slight sweetness, acidity, and bitterness. At the same time, the mouthfeel is fresh and light. The price is a little expensive for a packaged sake, but it is not out of the ordinary!

Activated Nigori Sake I've never had a sake that fizzes so much, even though it's a sake with a bottle-opening warning! The bubbles came up so fast that it took about 10 minutes before I could safely open the bottle! The aroma is a combination of freshly cooked rice and blue fruit-like aroma! Taste is rice juice lol. It has a green apple-like flavor and acidity with a gentle sweetness and flavor that makes it easy to drink! The bubbles are the same as when the bottle was opened, but seem to be finer than carbonated beverages.

The fizz right after opening the bottle was tremendous! I thought the crown blew off, but it blew off quite a bit, and I wasted a lot of it, for the first time in a long time, The aroma is gorgeous! The bitterness and acidity immediately after opening the bottle are the same as those of regular Red Diamond. The flavor and slight sweetness of the origami are distinctive. I have a feeling that after a little more time, the corners will be removed and the umami will become stronger. I would like to enjoy this sake more.
