The acidity is restrained, but the taste is cohesive, and the bitterness and sharpness finish it off.
As the name suggests, it is fresh and light, but less sharp than the Bizen Asahi.
This is delicious, but I would also like to try last year's "miraikafuda-shu," a sake with a more "wrinkled" umami flavor.
