It has a calculated taste with a subtle effervescence, acidity, sweetness, and umami that run through in good balance. It is a bottle that goes very well with meals.
This is the first unfiltered raw sake I have ever tasted in my life. The first sip is fruity and moderately sweet with a sense of gas. The second half of the bottle has a lingering acidity and astringency that rises in the second half. I am very satisfied with it.
Purchased at Sendai Station. It is "limited to Akita Prefecture". I have a weakness for "limited editions" lol.

Purchased intuitively at a store in Tokyo Station. The moment I opened the bottle, I felt a "pop". It has a slight carbonation when you drink it. It was fruity and light, but had a bitter aftertaste. I felt good in the Shinkansen train.
Two days later, the carbonation is gone and the bitterness in the aftertaste is reduced. Instead, the juiciness has increased.
