インチキンLast year we had Yamada-Nishiki, but this year we had Omachi. It has a slightly tangy texture and umami flavor that is typical of Tagaji, a lingering taste of moderate acidity, and the sweetness and flavor unique to Omachi rice, unlike Yamada-Nishiki, which is very delicious. Because of its strong flavor, we enjoyed it on its own rather than paired with something else.

I had heard that it was supposed to be sweet and fruity so that women who were new to sake would not be put off by it, but when I opened the bottle, I found that the ginjo aroma was a bit subdued, and the sweetness and sourness were not too strong, but the flavor was strong, and the balance of flavor, sweetness, and sourness was exquisite.
