It was delicious all the way through to the end, even on the 7th day after a short interval.

The first makami of the season is junmai nama sake. The aroma is clean and sweet. It has a hint of cemedine and ramune. The sweetness, acidity, and bitterness are clear and loud. The taste will come together after a week of drinking. It is a little harsh to drink at noon. Personally, I prefer the fire-aged, room temperature aged sake I had last year. I hope they will release Jungin nama sake in the future.

☺️. Ingredients:Rice (domestic), Rice malt (domestic) Rice used: 100% Hitanishiki Polishing ratio: Koji rice 65%, Kake rice 35 Alcohol Content:16 degrees or more but less than 17 degrees Good evening ⭐️. Yesterday, I was at a get-together at work. I was asked "How long do you think young people these days can stay on the stone?" I said I didn't know. "Three seconds." Really? We had such a conversation and drank beer🍺 throughout the party. Today's sake was recommended to me by the owner of my favorite liquor store, who said, "I think you'll like it. (By the way, the Aiya Festival is not over yet.) It is perfect for those who like sweet and tasty. Very fresh 🎶. It is sweet with just a hint of sourness. It is sweet and has just a hint of sourness. It was delicious. It seems that it is not yet well known within the sakewa, so it was kind of nice to be able to drink it at that point in time 😆.

Good evening, Ane-san! (^○^) Is it beer at the office get-together? Perhaps all you can drink? Mashigami, it looks delicious. Sweet and sour, that's good! I certainly haven't seen it at Sake-no-wa.

Tomoyuki Kumagai, good morning 😁. I drink beer or highballs at work parties and sake only with good friends ☺️I drank the most on this day, just pay up for what I drank 😅. I'm looking forward to seeing this brewery in a few years.

Opening on December 26, 2022 Ibaraki, Murai Brewery Purchased at the brewery Exciting alcohol stimulation, but mellow with mellow rice sweetness! Visually pleasing to see bubbles at the bottom when pouring into a boar cup😊. You can enjoy the youthfulness ✨

Moderately bouncy mouthfeel. Linen shirt. Fresh aroma on the palate, followed by sweetness. A little pear or ripe apple taste too. There is also some bitters to tighten it up. Also a nice pairing with sauerkraut with a mild olive oil aroma. The density is "just right" for this drink. I wonder if cream cheese would go well with it...it would go well with all kinds of snacks.

6/10 There was a tag on the bottle introducing Lactobacillus mesenteroides, and we had a lot of fun talking about lactobacilli. They said it was a sake made with a new lactic acid bacteria. Indeed, the acidity from the lactic acid was strong. I guessed that Neo-Classic means a new way of sake making using new lactobacilli while still using the traditional sake brewing method. I apologize if I am wrong.

It has a banana-like sweetness and a nice bitterness that is typical of junmai sake. Very tasty as a food sake.

7/10 Regular, right above the top, which I've been drinking a lot lately. The specs are said to be such that it will become a standard sake, but it is a newer sake in the series. I have the impression that the Makami sake is basically bitter, and this one also offers bitterness and acidity. I've had a few of the Shinagami and my impression is that it is stable as a food sake.

6/10 Shinjo's new sake. It was my favorite when I compared local sake from Ibaraki Prefecture, so I felt safe drinking it. Delicious sake with freshness and rice flavor. It has a strong aroma and leaves a unique aftertaste when it goes down your throat. This is a brand I would like to drink in the future.

Bought this sake at a sake event the other day. I've been buying a lot of the Shinjo series lately, but this may be my first nigori! I wish there were more opportunities like this to talk with the brewer! The aroma is apple-like. The aroma is apple-like, with a hint of koji (malted rice), which is unique to nigori. It has sweetness, but also has a strong acidity. It has a strong personality that is as strong as that of the lebanilla. I would like to leave it for a few days to see if it settles down, but it will be gone in two days.

Shinjo" from Murai Brewery Co. in Sakuragawa City, Ibaraki Prefecture, Japan. I couldn't find the brewery in my search, but I was curious about this sake when I saw it on the Internet. It was on sale, so I bought it. Delicious!

Still unknown Murai Brewery's Shinjo (Shinjo) Aroma is sharp with a little bit of dine. Slightly curdled sweetness like icing sugar. Rich, sweet flavor for a Hitanishiki that tends to be light. I thought it was not suitable for beginners because of its strong sweetness and alcohol content, but after 2 weeks, the sweetness has calmed down and a depth to it has been added, which is delicious! Certainly better than last year, but still has a lot of room to grow.
