The acidity was a bit strong on the first sip, but by the next day the balance between umami and sweetness was much better.
It was delicious all the way through to the end, even on the 7th day after a short interval.
The first makami of the season is junmai nama sake.
The aroma is clean and sweet.
It has a hint of cemedine and ramune.
The sweetness, acidity, and bitterness are clear and loud.
The taste will come together after a week of drinking.
It is a little harsh to drink at noon.
Personally, I prefer the fire-aged, room temperature aged sake I had last year.
I hope they will release Jungin nama sake in the future.

Exciting alcohol stimulation, but mellow with mellow rice sweetness! Visually pleasing to see bubbles at the bottom when pouring into a boar cup😊.
You can enjoy the youthfulness ✨
Moderately bouncy mouthfeel. Linen shirt.
Fresh aroma on the palate, followed by sweetness.
A little pear or ripe apple taste too.
There is also some bitters to tighten it up.
Also a nice pairing with sauerkraut with a mild olive oil aroma.
The density is "just right" for this drink.
I wonder if cream cheese would go well with it...it would go well with all kinds of snacks.

There was a tag on the bottle introducing Lactobacillus mesenteroides, and we had a lot of fun talking about lactobacilli.
They said it was a sake made with a new lactic acid bacteria.
Indeed, the acidity from the lactic acid was strong.
I guessed that Neo-Classic means a new way of sake making using new lactobacilli while still using the traditional sake brewing method.

Regular, right above the top, which I've been drinking a lot lately.
The specs are said to be such that it will become a standard sake, but it is a newer sake in the series.
I have the impression that the Makami sake is basically bitter, and this one also offers bitterness and acidity.
I've had a few of the Shinagami and my impression is that it is stable as a food sake.

Shinjo's new sake.
It was my favorite when I compared local sake from Ibaraki Prefecture, so I felt safe drinking it.
Delicious sake with freshness and rice flavor.
It has a strong aroma and leaves a unique aftertaste when it goes down your throat.
This is a brand I would like to drink in the future.

This one was drier, with a tangy sourness and bitterness.
It was a bit harsh, so I would have preferred it not to be served cold.

Aroma is sharp with a little bit of dine.
Slightly curdled sweetness like icing sugar.
Rich, sweet flavor for a Hitanishiki that tends to be light.
I thought it was not suitable for beginners because of its strong sweetness and alcohol content, but after 2 weeks, the sweetness has calmed down and a depth to it has been added, which is delicious!
Certainly better than last year, but still has a lot of room to grow.
