April 1 is the Day of Drunkenness...
Let's follow it.
A type of sake yeast to which lactobacillus acidophilus is added
Hachitan-Nishiki 80% polished rice Yeast is urea non-productive 701
Slightly carbonated bitterness with a hint of chili-chili-chili-chili-chili-chili-chili-chili
Refreshing and a little dine
Slightly cloying sweetness, strong lactic acidity
Warming up is good, so we warmed it up.
The richness and umami are enhanced, so it's good for warming up.
Good on tap, but I'd like to age it.
@Kumamoto RIKI
Just before the hectic flight, I posted this in a rage.
I thought I had searched and put the location correctly, but this was the only thing I left out.
I'll add a correction next month.
So the second one, right above the one the manager gave me.
First time for me.
It was the manager's recommendation.
It's like apple 🍎.
He poured quite a lot of it, but it was so good that I finished it in no time!
Grilled red beef skewer!
moderately tender, sprinkled with rock salt, and delicious!

It is said that the sake is released as a trial sake in the fall as hiyaoroshi (hiyagoroshi).
It seems that they use lactic acid bacteria to make the sake mother.
It has a chili gas and citrusy taste. The acidity is also quite high. It has a bitter and sharp taste. I heard that the impression changes when it is heated up, so I'll have to try it.
Oh, it's better to raise the temperature a little than to keep it cold.
It's good but not as perfect as the one I had before 🤔.
It's more like a graininess, or a bit of modernity added to sakes from the San'in region like the Ten Rising Sun.
I bought a beaver at Maya!
I ate the aosa salt first and couldn't stop 🤣.
Good morning bouken, I've never seen beaver before, but it's such a good food 😋 I'll look for it for a drink: ☝️
I went to the liquor store to try this one right above but they didn't have it 😂.
Good evening, bouken!
I can't help but wonder if it's fresh and robust tasting 😊.
Beavers come in a variety of flavors 😳- I'll have to go check out the sweets at Maya 😆.
Good evening Mr. Manachy😃.
I didn't know it existed until recently myself😅.
I think Cardi sometimes has it if Yamaya doesn't 😊It seems like this was a test brew and there were not many shipments 🤔.
Good evening, Mr. Sakeran 😃.
I've been making the text for the house drink in advance so I can post it anytime I want 😁.
It's rare that you even mention the type of seed koji 🤔.
Good evening, Pon-chan.
I guess they design the sake with the assumption that it will be shipped as hiyaoroshi (grated sake) 😋●Maya has a lot more to offer than just sake, so I'm looking forward to going there 😆.
Shinjo Junmai-Shu Casual-Modern, directly pumped raw sake
The popularity of this sake is gradually spreading.
This is the third season...the first new sake of the season 😋.
It has a slight effervescence that bounces in your mouth.
Slight bubbles that pop in the mouth.
It has a fruity taste like an apple with honey.
Aroma of rice with a hint of honey
Sweetness that spreads in the mouth like cotton candy
Clear and juicy acidity
Accented with lingering bitterness typical of new sake
(Borrowed from Hata Sake Shop's Instagram 😅)
This is delicious... 🤤.
I was right to buy it in a bottle but...
I need another bottle... 🤣
Good morning, Rafa 🐥.
I saw your instagram and thought I'd like to try it! I'm so proud of you ✨I wonder if it has more sweetness than the standard one?
I'd like to buy this one and this gold one together.
Oh...I was dozing 😅.
I saw your instagram too and went on a patrol to try this one 😁 It tasted just like the image I got from your instagram and it was very good 😋.
Good evening, Mr. Manachie 😃.
Ibaraki has a lot of good sake 😋I also got a bottle of Urasato's Usu nigorigo today 🤣a gift from Yasubeyesan... 🎁😅Wasn't that... Ibaraki... 🙄⁉️Ibaraki 😁...
Good evening bouken😃.
It was delicious😃I wonder if they are going to have bag hangings😳⁉️I need to patrol... 🚓Hata liquor store has a good selection of sake and I never get tired of patrolling 😌I wonder if it will be this weekend... 🤣I guess it is still a little early for the weekend 😁.
Good evening Jay & Nobby 😃.
I started patrolling Hata Sake Shop for Shinshu Kamerei 🚓 but it's a fun store with many other good sake 🤣I have a feeling Makami will break out this year... 😊I also bought Honkin at Hata 😌.

There are still some good sake in Ibaraki that we don't know about yet. ❗️
It is mild on the palate, with an impressive soft sweetness.
The umami has depth and strength.
The bitterness in the aftertaste is also 👌.
You can enjoy various expressions depending on the temperature.
I'm sure I'll be a repeat customer. ❣️
Purchased at Hashimoto-san. Deliciously dry. Well-balanced acidity and a subtle melon-like aroma. Perfect as a mid-meal drink with grilled redfish and red liver.
The grape-like sweetness spreads gently; after a few days, it becomes even more balanced, soft and gentle, and warming to the body and soul.
If you have the chance, I would like you to warm it up a little on a cold night.
It has a light and refreshing taste compared to most sake made from the traditional sake brewing process.
It is recommended to be served hot, but on this day, I served it hiya.

It is a new brand from Murai Brewery in Makabe-cho, Ibaraki Prefecture.
The rice is 100% Nipponbare. Polishing ratio 65%.
The top aroma is subtle, and my insensitive nose could not distinguish it, but the overt aroma has a very strong rice aroma.
It has a nice sharpness and is easy to drink, making it quite tasty.
This is my first time to drink sake from Ibaraki, but I found it to be an attractive sake that conjures up images of the landscape at the foot of Mt.
Thank you for the sake.
