This is "Shinjo Junmai Ginjo" from Murai Brewery in Ibaraki Prefecture.
I wanted to try a dry Yamadanishiki sake 🍶.
Murai Jozo is a sake brewery that makes dry sake with a hint of fragrance that lingers on the palate for a short while.
The original brands were "Komei" and "Makabe," but the brand they launched to make a fresh start is Shinjo.
The label design is Mt. Tsukuba. ⛰️
Crystal with yellow tints.
The aroma is fresh and gorgeous.
Green apple, banana, melon, pear with hints of acacia, and white dumpling with a hint of chervil.
The mouthfeel has a light texture.
The soft, transparent sweetness and umami are followed by a crisp acidity.
The crisp acidity continues to run from the palate to the nose, where it finishes with a sharp finish.
The bitter acidity lingers for a long time.
When the temperature is slightly warmed by hand, a round sweet umami taste in a clear sense emerges.
The acidity becomes more gentle, and the sourness seeps through with the sweetness and umami. ☺️
It is clean and dry, but the lingering aftertaste is gradually becoming more pronounced, which is typical of Yamada-Nishiki.
It was a clear and dry Yamadanishiki sake. ☺️
I don't drink dry sake very often, so it was a good experience for my taste buds.

You know a lot about Mt. Tsukuba 😳I'm a big fan of Tsukuba sake, my favorite sake is Urasato, and the label of Urasato Junmai Ginjo Nama Hashi is starry sky 🌌, so I recently found out that there is JAXA in Tsukuba 😅.
