Purchased at Hashimoto-san. Deliciously dry. Well-balanced acidity and a subtle melon-like aroma. Perfect as a mid-meal drink with grilled redfish and red liver.
The grape-like sweetness spreads gently; after a few days, it becomes even more balanced, soft and gentle, and warming to the body and soul.
If you have the chance, I would like you to warm it up a little on a cold night.
It has a light and refreshing taste compared to most sake made from the traditional sake brewing process.

It is a new brand from Murai Brewery in Makabe-cho, Ibaraki Prefecture.
The rice is 100% Nipponbare. Polishing ratio 65%.
The top aroma is subtle, and my insensitive nose could not distinguish it, but the overt aroma has a very strong rice aroma.
It has a nice sharpness and is easy to drink, making it quite tasty.
This is my first time to drink sake from Ibaraki, but I found it to be an attractive sake that conjures up images of the landscape at the foot of Mt.

This is "Shinjo Junmai Ginjo" from Murai Brewery in Ibaraki Prefecture.
I wanted to try a dry Yamadanishiki sake 🍶.
Murai Jozo is a sake brewery that makes dry sake with a hint of fragrance that lingers on the palate for a short while.
The original brands were "Komei" and "Makabe," but the brand they launched to make a fresh start is Shinjo.
The label design is Mt. Tsukuba. ⛰️
Crystal with yellow tints.
The aroma is fresh and gorgeous.
Green apple, banana, melon, pear with hints of acacia, and white dumpling with a hint of chervil.
The mouthfeel has a light texture.
The soft, transparent sweetness and umami are followed by a crisp acidity.
The crisp acidity continues to run from the palate to the nose, where it finishes with a sharp finish.
The bitter acidity lingers for a long time.
When the temperature is slightly warmed by hand, a round sweet umami taste in a clear sense emerges.
The acidity becomes more gentle, and the sourness seeps through with the sweetness and umami. ☺️
It is clean and dry, but the lingering aftertaste is gradually becoming more pronounced, which is typical of Yamada-Nishiki.

I don't drink dry sake very often, so it was a good experience for my taste buds.

When we visited Kadoya, we also stopped by Hata Sake Shop and bought this sake!
I was curious about this sake because everyone was drinking it.

Fruity and ricey, with modern flavors and classic parts. It's a unique flavor!
On the second day, the fruity taste is still there, and the umami is up↑Slightly less acidic and pungent.
It is a handsome wine that is delicious with a meal because of its robust flavor.
The 3rd day is also refreshing and tasty, and the pungency is almost gone, making it easy to drink.

The aroma still has a bit of an "alu" feel to it.
However, it is a little more subdued than the previous two bottles!
The taste is...strong!
The sweetness comes first, and then the umami is also thick!
Is the acidity weaker than the other two? Or almost none!
And then it finishes with bitterness, which leaves a unique aftertaste!
Personally... it's not undrinkable, but it's a little bit out of my taste... It's different from the impression of the last one I drank.
I'll enjoy to see how it changes with temperature changes!
The day before, I was waiting at my parents' house until opening time to pick up the hanpukai sake from Kadoya Brewery, when bouken-san informed me on a group line that Hata-san had this sake in stock for the first time in the Kansai region: ‼️
I'm a sucker for firsts, limited editions, and commemorative items, so I usually go home after driving to Kadoya, but I was in a hurry to get this sake, so I took my mom's bike and headed out 😆.
So I went out on my bike to get this sake 😆 and got the one that was directly pumped 🤩.
The next day I opened the bottle at home 😊.
The taste is a combo of apple and grape acidity as per everyone's review 🥰.
It's fresh and juicy, with a little bit of a direct pumping flavor. It is a very tasty sake with a fresh and juicy taste.
