Shinkame designed for cold sake. It has a high alcohol content and is dry with a strong bitter and astringent taste. It becomes drier as the day goes on.
Shinkame is a sake that is drunk with respect and gratitude. This time it was a pure Yamahai Junmai sake, which I have been avoiding. I imagined that it would be mellow, thick, strong, and drunken.
When I drank it, it was as I expected. I thought I was getting drunk too quickly, but then I realized it was 18.5 percent alcohol, and I was convinced that was right!
The taste changed on the fourth day. The strong taste of Yamahai was cut off and the flavor opened up with umami dominating. I thought this was good, but then I thought to myself, "If I like this, I shouldn't drink Shinkame's Yamahai.

This Gamera Shinkame is a blend of two types of aged sake
I drank it from chilled to warmed temperature.
As I thought, the goodness of Shinkame is released much more when it is warmed up!
The aroma, sweetness, umami, and sharpness overflows!
The sweetness is strong and gives the impression of "freshly cooked rice".
Such a Gamera Kamikame!
It is good to be sharp without pulling the sweetness out of it.
As always, you can feel the depth of sake!

Shinkame's raw sake. Alcohol 16.5%. It is thick and rich, but you will never get tired of drinking it. It seems to go well with all kinds of food.
By the way, we had meat and potatoes, seasonal sparkling firefly squid, cucumber with miso mayo, and boiled broccoli. It was delicious and I drank too much😆.
Sake is junmai, even better when heated. Legendary, which we saw at the sake store Yamanaka in Osaka Station. The yellowish color gives a sense of maturity, and the caramel aroma is nice. The red turtle is also cute. The use of all sake brewing rice is also excellent. Sake-like acidity and umami. Not a warmed sake, but good. I am glad to have met Shinkame.
