I wondered if it was special junmai or junmai! I thought when I saw the label😅.
I tasted it and it was so rich and delicious that I bought it. The tasting was at room temperature, but I tried it cold. Well, the spiciness is more noticeable when it's cold. I prefer it at room temperature.
At room temperature, it is sweet, tasty, and acidic.
I've left it at room temperature for a week after opening, and it's starting to show a bit of maturity. I wonder if it has a surprisingly delicate sake quality.

It is said that blue LEDs have the effect of inhibiting fermentation, and there is also a dry sake called "Illumina Red" that is irradiated with red LEDs, which have the effect of accelerating fermentation.

I knew the name of this sake, but I had never seen it in Kansai.
The junmai ginjo was sold out early, so I was only allowed to taste it.
I couldn't take a picture of it because it was quickly put away in the refrigerator 🤣.
I guess it was a little too cold...it was tasty but a little blurry compared to the first junmai I tasted.
I thought it would be better to drink it at room temperature.
I bought it because the Junmai here was too good.

Illumina Blue" is a sake made in a transparent tank made of acrylic and illuminated with blue LED lights to control fermentation.
The top-tasting aroma is kind of nasty and weird, and it tastes subtle and weird when you drink it😅.
I'm sure bouken thought the same thing 🤣.
There was another brand called Nishibori, but I headed elsewhere without tasting it.

They used a custom made transparent tank with specific light to control fermentation 😆.
It is very soft, sweet and has a strong rice taste. ❗️ It is well balanced, including the acidity at the end, so you won't get tired of drinking it ^ ^.
The full aroma from the nose further enhances the deliciousness of the sake‼️

The first sip had a "Hmm? but the aftertaste is nice and clean with no aftertaste. I have the impression that it is easier to drink at room temperature (hiya).
I drank it with ponzu (ponzu flavored white cod roe) and bonito sashimi, and I liked the aftertaste ☺️.

I bought this sake as a souvenir from Nikko, believing the word of mouth that it was the most popular. I chilled it well and served it with beer and then hot pot.
At first sip, I thought it was fruity, but the more I sipped, the more I could taste the umami and sweetness of the rice, but with a nice crisp finish ✨.
I think this is the kind of sake that will appeal to everyone!
