Nishibori Sake Brewing Company, Tochigi, Japan "Out of the Gate" booth. As the name suggests, 90% of the sake is consumed within the prefecture. New Junmai Monkai-fude Illumina Blue The Junmai, the basic Junmai of the brewery, was surprisingly too good 😳. The junmai ginjo is sold out and there are only a few bottles of junmai left 💦. It's still early in the season, so I didn't want to move with a basket, but I didn't want it to sell out even more, so I secured it immediately ❗ Illumina Blue" is a sake made in a transparent tank made of acrylic and illuminated with blue LED lights to control fermentation. The top-tasting aroma is kind of nasty and weird, and it tastes subtle and weird when you drink it😅. I'm sure bouken thought the same thing 🤣. There was another brand called Nishibori, but I headed elsewhere without tasting it.
