This sake is said to be made by collecting and bottling only "tailings sake" from the Daiginjo and Junmai sake of "Echizen Misaki" brewed that year.
First, the supernatant.
After a refreshing sweetness, there is a strong umami taste.
This is followed by a strong alcohol taste.
It has the umami of rice, but it is fruity.
The lingering umami flavor is also retained.
This is very good.
Then, it is stirred.
The pointy part becomes round.
It is wonderful.
The taste is refreshing and the umami spreads in the mouth.
The initial taste is sweet, but the aftertaste is sharp and tight.
It is a sake that can be enjoyed as both a light sweet sake and a dry sake.
I bought it because not many people posted about it in Echizen Cape. Purchased at Icoma
It has a nice and cool taste. The balance of sweet and spicy is really good. I think there are a lot of Echizen-misaki that you can drink forever.
The closer to room temperature, the sweeter the taste comes out.
Banana-like 🍌.

Tanabe Sake Brewery in Eiheiji-machi, Yoshida-gun. A brewery where brothers are the brewer and toji (master brewer).
For some reason, we greeted the brewer and were allowed to taste their sake.
Echizenmisaki Junmai Daiginjo Sakahomare
The taste is a bit citrusy and yogurt-y, with a clean, refreshing sweetness and umami.
The brewery's motto is to carefully brew small batches of daiginjos in small tanks.
The brewery is marked by the sign "Eiheiji Goyoujinshi" (Eiheiji Goyoujinshi).

I was so nervous that I could only bow my head and say, "Thank you. I was so nervous that I could only bow my head like 💦.
It seems that Gyve and Menshuoh are also recognized by the brewery, so Echizenmisaki-san must be checking out Sake-no-wa very well😳.
I wanted to say at least that...! I wish I could have said at least that...

It has a beautiful but juicy flavor.
It is versatile both on its own and in a meal.
I thought it was a sweeter type of Echizenmisaki 🤔. I thought it was a sweeter type 🤔.
I would like to drink it around New Year 😋.
Mr. Gyve, good evening 🌃
I wish you could do a tasting at Icoma 🤔.
It makes me feel better to write a review when I think the people inside are watching 🫡.
