Tasting Sake Quest #2 in my opinion. I looked at the answer and thought, hmmm...well, it tastes good. I feel that people these days like this kind of sake.

The rice is 80% polished medium-bodied Shin-Senbon rice.
Yeast is Hiroshima Momiji Yeast
The combination of the first time is also very Hiroshima-like and exciting!
The aroma is a mixture of sweet sake and sake lees with a hint of maturity.
Rough, grassy, miscellaneous flavors.
Dark, deep and umami.

On a business trip to Hiroshima, I bought it along with Batouzou at a nearby supermarket because it was reasonably priced at about 250 yen for 180 ml. We drank it with dinner in the hotel room. The taste was not bad, but not bad at all. I have the impression that it would be more enjoyable if we drank it at an izakaya (Japanese style bar), where the atmosphere is more relaxed. This is "Honshu Ichi" Junmai Ginjo Unfiltered Nama Sake from Umeda Shuzo Brewery located in Funakoshi, Aki-ku, Hiroshima City, Hiroshima Prefecture. The brewery produces only 200 koku of sake per year, and the rice, yeast, and water used to make the sake are all locally grown. Senbon-Nishiki, the rice used for Honshu Ichi, is a unique Hiroshima sake rice that has been improved to suit the local climate (in 2000, it became a prefectural government-recommended variety), with the advantages of its parent Yamada-Nishiki, but with shorter length and earlier ripening. Honshu Ichiban has won many awards at "Kura Master" and "IWC" and is a representative brand that is highly regarded in Europe as well.
It has a clear golden color and a gorgeous green apple-like aroma that spreads from the moment it is poured. The balance between a full-bodied flavor with just the right amount of thickness and a modest natural sweetness. Sharp acidity appears along with contrasting tingling nuances. This is a bottle with a fruity, rounded and full-bodied taste, but with a clear and crisp finish.
When I first drank it, I thought it might be fruity, but as is typical of junmai unfiltered, it has a robust flavor, sharpness and acidity, and is delicious!
