This is the first time I have heard of this brewery and its brand name.
I was recommended this sake by a liquor store where I drive to for a long trip. I bought it because it was recommended to me.
It is a low-alcohol junmai ginjo brewed with a raw yeast sake mother that has been cultivated for about a month in a very small quantity.
SAUVAGE means "wild" in French!
The aroma after opening the bottle was, wow! It has a unique aroma, like Delaware? It has a complex aroma with a hint of fermented food, but it is very fresh.
When you pour it into the glass, you can feel the bubbles sticking to the glass 🫧.
In the mouth, it is full of gas and freshness 😘.
It is low in alcohol, but the taste is robust and complex, so you can enjoy the depth of flavor 🤩.
It's a taste that you can't find anywhere else! I can't explain the taste well with my vocabulary 😅If you see it, it's worth to buy and try it 😘.

I thought 🤔 what would be good to pair with fried bean sprouts with hormone and bought this one.
The label also has a nice coloring with a traditional austere look with the large cups and the expertly written mustache 😊.
Let's start with the standing aroma. The color is yellowish and there is a hint of lactic acid aroma like pickles. When you put it in your mouth, the sweetness of the rice and the sourness that reminds you of lactic acidity, along with the alcohol and umami that are unique to sake, spread out. It is sweeter than expected and easy to drink. The last taste is slightly bitter.
Serve with fried hormone with bean sprouts. The sweetness and umami of the fat from the hormone combined with this sake mellows out the acidity and increases the sweetness and umami 👍It could be a sake that goes well with anything as a food sake🍶☺️

I got it the other day and couldn't resist opening the bottle on a weekday 🤣 lol.

This sake was purchased in Gunma. Brewed in tank #67 at Makino Shuzo in Oosakizuki, it is said to be the best conditioned Junmai sake for the first half of 2025. The taste is fruity and full, like melon juice. But it's not too rich, so you won't get tired of drinking it. A good buy.
