Macho acidity
Sweet and sour aroma, smooth attack. The taste is macho, sweet and tasty. It goes in smoothly and has a good sharpness.
It's a little strange. I was reminded 😅.
So I went with the soft simmered octopus recommended by the staff. I enjoyed it to a macho degree 💪.
It is a chic series of Oubai, and is said to be made from old-style sake yeast.
Chilled.
The aroma is clean and banana-like. It has a gentle carbonation that caresses the palate and a mild sweetness. The deep and lingering acidity overlaps with it, which I like very much.
It goes well with food. Today, I had stewed chicken wings and radish.
If I open the fridge for sake and this is sitting there... I can't stand it even mid-week 😓.

...but the last time I drank it for the first time, it was a draft sake...so technically, this hi-iri🔥 is my first time drinking it🤤.
When I opened the bottle, the aroma wasn't that great 🤔, but when I poured it into a glass ✨, it smelled like a faint apple ✨.
Then, I will take a sip 😋.
From the apple-like 🍎 sweetness, to the miscellaneous taste due to the low milling 🌾? Bitterness? It's a bit complex, but... you can feel the robust flavor from the moment you put it in your mouth to the moment you swallow it.
I personally prefer the Gorilla Sake, which I drank for the first time, but this one has a mild taste that can be drunk peacefully 😊.
The complex aftertaste slowly fades away...very pleasant 🙂↕️
If I were to use an analogy... a freshly opened soda is like a gorilla fresh 🫧, and a gorilla fire 🔥 with no carbonation but a deep flavor 😌.
If you're not careful, you'll run out if you drink it in small doses😅.

The aftertaste is almost bitter, with a simple hint of rice-like sweetness.
It is 90% polished rice, but there is a nice complexity to the so-called miscellaneous flavors.

Speaking of Macho💪, the raw 🦍 was outstandingly delicious 🤔, but I remember feeling this one was a concept close to that 🦍.
It has the cleanness of Yamada Nishiki but with a nice tangy taste to match ✨.
This year, I'm talking about the macho chase, so the waitresses have it too 💁♂️ lol
